The corn used for popped corn is not the same corn used for tortilla chips. It has a different composition - including significantly more starch, which is what allows it to pop. The small difference in composition - if you don't have a true _allergy_, just a sensitivity - may make the difference for your body.

_Some_ (not much) frozen chicken has stuff added to it - and it may include wheat. This will have to be put on the label, but if you don't read over the label with a fine tooth comb, you could miss it. (I've seen it once or twice in my travels...) Also, checking the ranch dressing is a good idea. You might also consider if the area in which you prepared... -

Yeah... if you ever head over to Italy, definitely go to Modena and pick up some of the good stuff - the stuff they don't export, except for at prices like $100/100ml. ;-) It's MUCH cheaper there. I brought home a backpack full, and I think we spent about 100 Eu for it all. (Mind you, that's for what will likely be four years worth of good balsamico!) -

perhaps the cooked butter? to make corn tortillas, you need nothing more than masa and water, you might give that a try. there could also be something left over on your cast iron pan. -

From the research I've read, no - she might not actually have had the disease. Not all genetic conditions are active from birth because not all genes are always expressed. You CAN go through some (or all) of your life with the genes that predispose you to getting the damage that is celiac disease, but not have them expressed, so that your immune system... -

And to respond, but end up not actually helping, this year I've used both Pantene and Dove. :-) (Actually, I've used one of Trader Joe's shampoos/conditioners as well... their "Spa" line, with the citrus scent. Those were gluten-free too, as I recall.) -

As with any diet, as long as you make sure your diet is varied and healthy, there is no problem with someone who is not gluten intolerant going gluten free. Some studies have shown that celiacs don't necessarily get enough folic acid, amongst a couple other vitamins, but the root cause seemed to be that gluten free bread and pasta does not have the additives... -

A lot of people are asymptomatic - even though damage is being done. I don't get severe symptoms myself, though some discomfort. It varies a lot from person to person - one reason why some people do find it harder to remain compliant. -

When I'm not feeling well, and want something easy on my intestines, I make chicken soup with rice - a big pot, so I can have leftovers in the fridge. Chicken, well cooked rice, cooked carrots, and cooked onions are - for most people - not too hard on the intestines, and has the taste/smell of comfort food (to me, anyway). -
I find eating out at some restaurants stressful, but not PF Chang's. I just ask for the gluten free menu, and point to the item I want, on the gluten-free menu, when the server takes our order. As everyone else has said, the blood counts will not reveal damage. This is one reason why blood tests, which don't show false positives, DO show false negatives. You have to do a lot of damage to your intestines to get antibodies showing up in your bloodstream. Untreated celiac - and cheating means untreated - decreases your average age of death and... -

Yes, the symptoms can vary from time to time, but your post has me concerned. Untreated celiac (and cheating counts as untreated, I'm afraid) is a risk factor for infertility and problem pregnancies. Now, if ANY is not the time to cheat, unfortunately. What tests did you have done and what were the results? False positives are almost unheard of. -

Arrowhead Mills is pretty well known for their stance on this one. They're "Made from Gluten-Free Ingredients" label... gotta love it. (But don't consider it small - most labels are smaller. You'll get used to looking for ALL the text, no matter how small, on labels. ;-) ) But be aware that most things that say gluten-free MAY WELL BE produced on lines... -

kabowman - the reason we are suggesting keeping dairy out is that the tests showed she was producing antibodies to casein as well as to gluten. you don't necessarily have to eliminate dairy or soy because of gluten intolerance, but they may also give you symptoms if you are intolerant to those proteins as well. -

If your diagnosis included a biopsy and bloodwork, then no, they weren't wrong. False positives are virtually unheard of - barring lab mistakes confusing your results with someone else. The problem is that a lot of celiacs are asymptomatic - you don't feel the pain, but your intestines will still be getting damaged, even if it's slowly. Not everyone reacts... -

Cooking from scratch need not be very time consuming, particularly if you take an hour or two on the weekends to prepare for the coming week. It may mean a slightly different way of eating, but it is still healthy and tasty. (Most of what I make takes half an hour to prepare/cook - from scratch.) -

Enterolab doesn't diagnose celiac disease specifically - because they are not doing a biopsy. (It's kinda a CYA, in my opinion, but an important one for now if they are to gain credibility amongst the disbelieving medical professionals out there.)
