  1. Another thing to consider is that, if you are regularly eating these foods, you're essentially regularly feeling a bit sick (since you note the intestinal issues). "Feeling sick" after ingesting gluten doesn't mean you feel like you have a cold, or necessarily that you feel nauseous. It's different for all of us. But if you've been in that state for so...
  2. You could also get an ice cream maker to make your own out of safe soy milks or sorbets.
  3. orange county, california. until we get fed up with being forced to rent because finding a decent house for under half a mil is impossible. then, eh... I'll have to move away from my native, beloved california. :-( boooo
  4. I agree w/ aramgard... I had inconclusive blood tests, but positive results on the diet, and that's all I really care about. If your doctor won't take the results of a dietary challenge seriously, AND you still care that it is clearly documented on his records (AND you don't want to try a different doctor), then maybe. But there are pros and cons to having...
  5. huh... I've never had the semolina pasta I make disintegrate when cooking it right away... Learn something new every day! I'll have to give it a try, because I enjoyed making fresh pasta and thought that - for many dishes - if I had the time, it was worth it. (My husband, who - while Italian, but not celiac - won't touch pasta, would always help me make...
  6. Eh, don't be so quick to call it a good deal. That'd be kinda like calling having celiac a good deal because it makes you eat healthy. I have yet to find an effective pair of sunglasses that I can wear, and I have very light sensitive eyes. (And live in Southern California, where you need them, even in "winter".) I really wouldn't mind having shorter...
  7. If anyone had a case of "mild" celiac (symptom wise) I could probably be it. Particularly in the gastro department. But yes, I've definitely gotten more sensitive to accidents over the eight months I've been gluten-free.
  8. I haven't heard that either, but I too have very long lashes. (Measured at up to 15mm! I'm a geek!) Actually, I just find that it makes finding glasses hard - as most of them sit close enough that my eyelashes brush against them far too much.
  9. hmm... uncle is a second degree relative... that gives you a 1 in 40 chance (statistically speaking) of having it as well (Open Original Shared Link). Sounds like he needs a bit more education... (I also have never heard of that test...)
  10. I'm sure you have plenty of things in your house that are gluten free. Do you have any carrots? Bananas? Tomatoes? Apples? Oranges? Zucchini? Broccoli? Potatoes? Rice? Chicken? Eggs? Beef? Pork? Corn Tortillas (you do have to check the package, but lots of them are the basic corn, salt, lime recipe)? Dairy is a call you have to make yourself...
  11. Kathleen, Have you found that you can't just cook the pasta once you make it? Without drying? I haven't tried making gluten-free pasta, but before I went gluten-free, if I were to make lasagna, I'd pull out my pasta machine (not a press, but a roller type). Same thing if I were to make ravioli. Is there something about the gluten-free pasta recipes...
  12. no, only.... I forget the percentage... 20%? or so of celiacs also have dermetitis herpetformis (sp?).
  13. If the pain is in your intestines, perhaps a low-residue diet would help? It's mainly liquids, and meat and fat... which is a bit easier than liquids alone. :-)
  14. Yep, the gyn for my vulvar vestibulitis is 90 miles away (3.5 hours during traffic! blah!), as is the sex therapist whom I see for the condition. A doctor who can help you is worth the time. (It's a pain coordinating with work, but eh... my health is more important.)
  15. Are you also getting plenty of weight bearing exercise? That's crucial to stimulate bone growth.
  16. are you getting sufficient magnesium, zinc, and vit D with the calcium? there was a study (it's linked on this site somewhere) that magnesium is far more important for celiacs for bone health than calcium... (and too many calcium supplements don't have enough of it! bah on them!)
  17. I just wanted to add that I used to always be able to see a bit of the food that went through me as well. (DEFINTELY true of corn, but I understand some of the cellulose in corn is undigestable, and I get NO symptoms from corn, so I'm not worried about that one) That's not so much the case any more now that I'm gluten-free. (If I have an accident, it'll...
  18. You can also add the ground flax seed to smoothies. I add two tablespoons for the omega-3's and protein.
  19. Especially without soy, it can be tough. But other legumes have a fair amount of protein, and there are wise choices you can make about grains - like amaranth and quinoa - that have a decent amount of protien. Additionally, eggs will be very useful - particular plenty of egg whites. And if you can have dairy (and be ovo-lacto vegetarian), it will be yet...
  20. Well, part of the problem may be that, as Americans (which I'm assuming is true for your girlfriend) or really almost any modern country, we often think that we should be able to do whatever we want (regardless if it is good or bad) and a pill or shot should be able to fix us. There's no pill or shot for this. There's no "doing what I want to, regardless...
  21. Usually allergies cause hives, though celiac disease can cause DH. If she got the hives worse without the nightgown, have you checked into the laundry detergent? (My father is sensitive to a number of detergents.) What about whatever she is sleeping on?
  22. granny, you asked about these two recipes. I have no promise that they taste like what you're used to - I've pretty much always cooked from scratch, so trying to match mixes... is something I opted out of long ago. :-) (And, for fun and amusement, three other recipes I typed out for someone else today - two uncooked salads (the broccoli-shrimp salad is...
  23. granny, sure - no problem
  24. My blood test wasn't negative, but it wasn't positive either. I determined by celiac status by how I did on the gluten-free diet. I felt better going gluten-free, and can tell when I get something that's contaminated, so I stay gluten-free.
