  1. I would like to try to make these this year. Has anyone got any experience with this? Or suggestions for a gingerbread recipe that would hold up to making houses? TIA! ~April
  2. I stopped buying those, but instead get the Gluten Free Pantry's Italian bread/pizza crust mix, and make abougt a half dozen crusts to freeze. They are much tastier and softer that way. For ease, I freeze small portions of spaghetti sauce to top the pizza in containers, and defrost what I need at a time.
  3. I freeze small containers of safe spaghetti sauce. Then in a pinch I make pizza bagels using frozen gluten-free bagels. DS loves these! I have also done the corn tortilla trick a few times, as well.
  4. Sometimes you may have a child who feels shortchanged on not being able to eat candy like the other kids, like my son. What I do is this. I go to the Dollar store and pick about ten larger items that are on the gluten-free list. These are items I know ds loves. I go through his candy after T or T and set up a *store* where he can trade 10 unwanted items...

  9. I have to second the rising part of this bread- I do it for an hour-and a half too. I also put the bread into TWO loaf pans, which allows both to rise to the top and makes a lighter, fluffier bread. This is my secret, and I like to sneak a slice of this warm out of the oven, and it really is GOOD! Either freeze and let defrost or leave out but use quickly...
  10. Oh yes, this was my son! In fact, he still has the occasional bm accident and he is 8 now. He has both Celiacs and Dairy intolerances, and the dairy will often cause this too if he ingests some. I assure you that testing is the way to go, our GI doc did ours and we have never looked back.   11. We are there, too. My son was about 30 lbs at the same age. He is now 8 years old and has been gluten and dairy-free for about two years. He is still small, he weighs about 45 pounds and wears clothes designed for a 5-6 yo. But, he is gaining steadily and is much healthier.   12. I just wanted to say that I bake this bread all the time. One trick I learned to make it lighter and fluffier is to divide the batter into TWO loaf pans instead of one. When you go to a restaurant, are you able to purchase a specially made kids meal for the same low price as the regular ones? Do you feel that you should be entitled to?   14. I chose to buy a toaster oven, because I didn't want mistakes happening with two different toasters. So, anytime we toast bread for Alex we use the heavy duty foil and throw it out after each use.
  15. Thanks so much for your input, everyone! I really need to see that I am not alone in this concern. My dh and I have decided to handle it ourselves, rather than excpet the team to conform to his dietary needs. Especially since it is a bit after-the-fact of having the snack schedule handed out.   16. My son also has to be dairy-free. He takes turkey slices with soy cheese, crackers with soy cheese, hot dogs in a thermos, tuna salad or sandwiches on bread made from The Gluten Free Pantry mix. He has fruit of all kinds, cashews, gluten'free fruit bars, dry cereal (Envirokids), fresh popcorn, things like that.
  17. My dh has been handling the practices for my 7 yo son's baseball, so I haven't had much contact with the coach. If I had, I probably would have mentioned Alex's gluten intolerance to them. But then again, is it too hard for a parent buying snacks for a whole team to make sure they are gluten-free? I know others have said I should give them a list of acceptable...
  18. Thanks! I hadn't thought about the texture needed for string cheese. Really, right now all I can find is the sliced cheese at the store I shop at. I will have to travel to the health food store to see if they even have block or snack cheese he can have as a substitute.
  19. Hi! I am doing pretty well finding foods for my son, who has to remain off both gluten and dairy for the time being. One of the things he is missing is string cheese that his sister can have. He would like to have some, but it has to be both gluten and dairy free. Does anyone know of a place where I can find them online? I haven't had luck at any local stores...
  20. Thanks for your replies! I am really trying to educate my dh on this. But, he still falls back on the thinking that Alex has some accidents because he doesn't want to stop what he is doing. For instance, he doesn't like to stop playing computer, so he'll have an accident instead of going to the tolet. Now, I know that celiac disease gives him uncontrollable...
  21. I do have some Immodium in tablet form he can take, but that is usually after-the-fact. I think I need to help educate my dh more on being sensitive to Celaic's, I am sure that would help too.
  22. I got a lot of help here when my son was diagnosed with Celiac's in October of last year. He'd been having chronic diarrhea which didn't go away after elminating all sources of dairy from his diet. Now, he is doing much better with a gluten-free diet, but it seems we still have "break-through" diarrhea. Sometimes it is when he gets gluten or dairy accidentally...
