ARCHIVED Gluten Free Gingerbread House- Help
johalex posted a topic in Gluten-Free Recipes & Cooking Tips
I would like to try to make these this year. Has anyone got any experience with this? Or suggestions for a gingerbread recipe that would hold up to making houses? TIA! ~April -
ARCHIVED Glutino Frozen Pizza Crusts
johalex replied to LuvMoosic4life's topic in Gluten-Free Foods, Products, Shopping & Medications
I stopped buying those, but instead get the Gluten Free Pantry's Italian bread/pizza crust mix, and make abougt a half dozen crusts to freeze. They are much tastier and softer that way. For ease, I freeze small portions of spaghetti sauce to top the pizza in containers, and defrost what I need at a time. -
I freeze small containers of safe spaghetti sauce. Then in a pinch I make pizza bagels using frozen gluten-free bagels. DS loves these! I have also done the corn tortilla trick a few times, as well.

ARCHIVED I Just Thought About This?
johalex replied to dreamindarlin's topic in Parents, Friends and Loved Ones of Celiacs
Sometimes you may have a child who feels shortchanged on not being able to eat candy like the other kids, like my son. What I do is this. I go to the Dollar store and pick about ten larger items that are on the gluten-free list. These are items I know ds loves. I go through his candy after T or T and set up a *store* where he can trade 10 unwanted items... -
ARCHIVED Exciting Halloween Suggestion For Trick Or Treat
johalex posted a topic in Parents, Friends and Loved Ones of Celiacs
My ds and I had a heart-to-heart talk about his Celiacs a few weeks back. He is very concerned about Halloween and told me he feels both sad and angry when we go through his Halloween candy and take the things that he cannot eat. It isn't any better when we trade them with his sister- he still feels badly by it all. So, I thought and thought and came up... -
ARCHIVED Grrr...the Rash And Loose Poos Are Back...
johalex replied to Momof2cuties's topic in Parents, Friends and Loved Ones of Celiacs
I do know that my son's symptoms never totally disappeared until we also elimnated all dairy,so there may possibly be more to your dd's food issues than the Celiacs. Any more rashes or new info lately? -
ARCHIVED Behavior Changes With Dairy Intolerance?
johalex replied to Nic's topic in Parents, Friends and Loved Ones of Celiacs
I certainly think that behavior from dairy intolerances can manifest themselves in many different ways. I would certainly check it out if I were in your friend's shoes. My son had such serious behavior issues at ages 4-5 that I had him evaluated by a Psychiatrist. I definitely had adhd concerns along with Aspergers. There was even speculation that it... -
ARCHIVED How Do You Handle Birthday Parties?
johalex posted a topic in Parents, Friends and Loved Ones of Celiacs
Hello! My son is 8 and has been diagnosed with Celiacs for about a year-and-a-half. He is also lactose intolerant. I was curious as to how others handle it when sending a child with Celiac's to a birthday party. My son knows the foods he can and cannot eat, for the most part since he is older. I always make a point to call to RSVP ahead of time to find... -
ARCHIVED How Long Does It Take To Bake Good Bread?
johalex replied to a topic in Parents, Friends and Loved Ones of Celiacs
I have to second the rising part of this bread- I do it for an hour-and a half too. I also put the bread into TWO loaf pans, which allows both to rise to the top and makes a lighter, fluffier bread. This is my secret, and I like to sneak a slice of this warm out of the oven, and it really is GOOD! Either freeze and let defrost or leave out but use quickly... -
ARCHIVED My Son Is Having Problems.
johalex replied to Ridgewalker's topic in Parents, Friends and Loved Ones of Celiacs
Oh yes, this was my son! In fact, he still has the occasional bm accident and he is 8 now. He has both Celiacs and Dairy intolerances, and the dairy will often cause this too if he ingests some. I assure you that testing is the way to go, our GI doc did ours and we have never looked back. He is so much healthier and I am thankful we were able to work on... -
ARCHIVED Low Weight 3 1/2 Year Old
johalex replied to ELB3345's topic in Parents, Friends and Loved Ones of Celiacs
We are there, too. My son was about 30 lbs at the same age. He is now 8 years old and has been gluten and dairy-free for about two years. He is still small, he weighs about 45 pounds and wears clothes designed for a 5-6 yo. But, he is gaining steadily and is much healthier. He eats very well and we are constantly looking for ways to add the fat top his diet... -
ARCHIVED gluten-free Bread Mix
johalex replied to Nikki2003's topic in Parents, Friends and Loved Ones of Celiacs
I just wanted to say that I bake this bread all the time. One trick I learned to make it lighter and fluffier is to divide the batter into TWO loaf pans instead of one. I l et is rise at least an hour and a half. This makes it rise even higher and fluffier. BE careful not bang the pan when transferring it to the oven as it will deflate. This trick makes... -
ARCHIVED Should Celiac Kids Be Entitled To Low-price Kids Meals?
johalex posted a topic in Gluten-Free Restaurants
I am interested to hear what other parents of celiacs. or celiacs themselves have to say about this. When you go to a restaurant, are you able to purchase a specially made kids meal for the same low price as the regular ones? Do you feel that you should be entitled to? Some restaurants I go to are great about this- such as Lindburgers. They make... -
ARCHIVED Ok...i Was All Ready To Buy A New Toaster ... Then
johalex replied to Lymetoo's topic in Gluten-Free Foods, Products, Shopping & Medications
I chose to buy a toaster oven, because I didn't want mistakes happening with two different toasters. So, anytime we toast bread for Alex we use the heavy duty foil and throw it out after each use. -
ARCHIVED How To Handle Snacks Handed Out After Baseball Games
johalex replied to johalex's topic in Parents, Friends and Loved Ones of Celiacs
Thanks so much for your input, everyone! I really need to see that I am not alone in this concern. My dh and I have decided to handle it ourselves, rather than excpet the team to conform to his dietary needs. Especially since it is a bit after-the-fact of having the snack schedule handed out. I am going to take Alex shopping to pick out his own special treats... -
ARCHIVED School Aged Kids And Lunch
johalex replied to Tony'sMom's topic in Parents, Friends and Loved Ones of Celiacs
My son also has to be dairy-free. He takes turkey slices with soy cheese, crackers with soy cheese, hot dogs in a thermos, tuna salad or sandwiches on bread made from The Gluten Free Pantry mix. He has fruit of all kinds, cashews, gluten'free fruit bars, dry cereal (Envirokids), fresh popcorn, things like that. -
ARCHIVED How To Handle Snacks Handed Out After Baseball Games
johalex posted a topic in Parents, Friends and Loved Ones of Celiacs
My dh has been handling the practices for my 7 yo son's baseball, so I haven't had much contact with the coach. If I had, I probably would have mentioned Alex's gluten intolerance to them. But then again, is it too hard for a parent buying snacks for a whole team to make sure they are gluten-free? I know others have said I should give them a list of acceptable... -
ARCHIVED Dairy Free And Gluten Free-want String Cheese
johalex replied to johalex's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks! I hadn't thought about the texture needed for string cheese. Really, right now all I can find is the sliced cheese at the store I shop at. I will have to travel to the health food store to see if they even have block or snack cheese he can have as a substitute. -
ARCHIVED Dairy Free And Gluten Free-want String Cheese
johalex posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Hi! I am doing pretty well finding foods for my son, who has to remain off both gluten and dairy for the time being. One of the things he is missing is string cheese that his sister can have. He would like to have some, but it has to be both gluten and dairy free. Does anyone know of a place where I can find them online? I haven't had luck at any local stores... -
ARCHIVED Dealing With Diarrhea And Accidents
johalex replied to johalex's topic in Parents, Friends and Loved Ones of Celiacs
Thanks for your replies! I am really trying to educate my dh on this. But, he still falls back on the thinking that Alex has some accidents because he doesn't want to stop what he is doing. For instance, he doesn't like to stop playing computer, so he'll have an accident instead of going to the tolet. Now, I know that celiac disease gives him uncontrollable... -
ARCHIVED Dealing With Diarrhea And Accidents
johalex replied to johalex's topic in Parents, Friends and Loved Ones of Celiacs
I do have some Immodium in tablet form he can take, but that is usually after-the-fact. I think I need to help educate my dh more on being sensitive to Celaic's, I am sure that would help too. -
ARCHIVED Dealing With Diarrhea And Accidents
johalex posted a topic in Parents, Friends and Loved Ones of Celiacs
I got a lot of help here when my son was diagnosed with Celiac's in October of last year. He'd been having chronic diarrhea which didn't go away after elminating all sources of dairy from his diet. Now, he is doing much better with a gluten-free diet, but it seems we still have "break-through" diarrhea. Sometimes it is when he gets gluten or dairy accidentally... -
ARCHIVED Newbie Needs Help With Interpreting Results
johalex posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hello! My name is April and I am the mother to 6 year old boy/girl twins, one of whom is being tested for Celiac's disease. Alex (my boy) is lactose intolerant as well, but has had chronic diarrhea which had gotten worse over the past three months. It was to the point where he was having it every day, and many soiling accidents, where we ended up testing...
