  1. I have found a gluten free bread that tastes and acts like real bread. It holds well over an extended period of time in the refrigerator, is not mushy/crumbly/cake-like and does not need to be toasted. It acts, tastes and smells like real bread. It comes from Colorado Springs, Colorado and they do ship! Ingredients: Filtered water, Tapioca Starch, Certified...
  2. Okay, thanks for the clarification.
  3. According to what you said your test was a cheek swab. The test I am talking about is a blood test. Thank you so much for answering me. I have more information now.
  4. nvsmom, I'm wondering why you increased your gluten for a couple of weeks before taking the test. The test is for genes not antibodies. I'm confused.
  5. Thank you MycasMommy I can't handle dairy products now until my gut heals.....But once I am back on track I will. Or...at least that has been my history so far. We will see.
  6. I figured out why I had a reaction to the Cheez Whiz. I have developed an intolerance for all corn products. But it is not an allergy. I was allergy tested for corn about 6 weeks ago. Cheez Whiz has corn syrup in it. It's all I can figure out. chocominties, you asked what symptoms I exhibit. They are similar to a gluten attack only milder, coupled...
  7. I was reading in the Gluten Free Living Magazine about celiac disease tests and was surprised that Canada offers an over-the-counter celiac disease test. It tests for IgA antibodies in the tested blood (yes, you will have to prick your finger). The article also stated the FDA has not approved an over-the-counter celiac test in the United States. So I went...
  8. Kareng, hmmm, my lactose symptoms are different than my gluten symptoms so it couldn't have been the whey then. Thanks for bringing that to my attention. Yes, gilligan, when I became lactose intolerant it was just as quickly. Tho I was able to use the Lactaid tablets and still do when I do consume cheese. Sometimes it works well, sometimes so-so. ...
  9. Looking back at the ingredients, I'm really wondering if I had a reaction to the whey. It is listed as the first ingredient and also the 7th ingredient (less than 2% of whey protein concentrate). I think I need to look at that ingredient more closely in the future. And do taste tests. I need to go in for allergy testing. Can the test for whey?
  10. Thanks chocominties. My symptoms were very bizarre. Brain synapses were all over the place. I was jerky and twitchy for about 30-45 minutes or so until it finally started calming down. That and the usual body aches. Listless the next entire day. With body pains as well. Still have not fully recovered but I'm getting there. Kareng, I became lactose...
  11. Thanks bartfull for the advice. I eat cheddar cheese every once i awhile but have dropped milk altogether. I have decided to start a list of gluten-free foods that I get a reaction from and eventually find the culprit through process of elimination. I did quit dairy for about 6 months to heal. I am digesting much better than I was when I first figured...
  12. I've been gluten intolerant since summer. Fairly new but the learning curve is alot smaller now that I have been doing this for about 8 months. Yes, I was tested. Blood test. But, as you know all tests are inconclusive and may read a negative, especially if you have been gluten free for awhile, which I had when tested. I am way to sensitive...
  13. Okay, here's what I had for dinner last night. Pork chops floured in gluten-free flour and fried using Bertolli olive oil (I don't get glutened by Bertolli). These were actually leftovers from a previous dinner so I know I didn't get glutened from those. For a vegetable we had zucchini fritters. Fresh zucchini, gluten-free flour, one fresh duck egg...
  14. This seems to be the most recent thread on Cheez Wiz so I will give my input. It does list maltodextrin but not what type so I tried it last night. I was horribly glutened. Almost had to go to the hospital.
  15. From what I've read if your ancestors did not eat wheat or grain products OR if your ancestors grew up in a sun-deprived land then most likely you have the predisposition for gluten intolerance. And yes, I've read about the Irish and the Jewish nations. My question for the Jewish population is the Jews were shuffled around from many European states. So...
  16. nvsmom, If you don't eat gluten, your body no longer needs to produce antibodies since you are no longer consuming the gluten. Short answer to your question. Yes.
  17. I probably was gluten intolerant and just not showing problematic symptoms for at least the last year or maybe even two. This summer my symptoms hit me like a ton of bricks. So yes, my lactose intolerance may have been caused by the gluten intolerance. Thanks. Gee, what is gluten-free? Lol, I'm still on the "learning curve",
  18. Also found this article which is different from the one above. Celiac can come from low sunlight heritage countries (far from equator) like: Scotland, England, Ireland, Canada, Europe and more. When vit D goes down due to sunlight...the immune system goes down. Celiac may also affect people who lived at the equator who didn't eat dairy/gluten in past...
  19. When I went to my doctor, she said that Asians and Indians were more predisposed to develop food allergies. It took a long time to find anything on the internet but here it is: It's talking about lactose intolerance but I have both lactose and gluten intolerances. And I have read somewhere that if you have gluten intolerance you may also be lactose...
  20. From what I've read, when you go gluten-free your body no longer produces antibodies for gluten so the answer is yes, you do become more sensitive.
  21. I live in a smallish town and the grocery stores are just now stocking some gluten free foods. Each week I go in and find new stuff!! So no, we don't have a gluten free restaurant where I live. And I wouldn't drive out of town to a larger metropolis to just eat at a restaurant. I'm not that bad of a cook and can whip up some pretty good meals myself....
  22. Udi's has some gluten free granolas you might like.
  23. I'm just learning about all of this. I was tested at my doctor's office and yesterday when my doctor's office called and said I was not gluten intolerant, I was blown away. So I came online and found this thread. The gluten challenge was new information to me. When I learned I'd have to eat gluten food for 4-12 weeks. I said no way. My hubby was the...
  24. Our foods are so full of these products. I wish you well on your journey. I have just started mine a few months ago and am on "the learning curve" but happy to be feeling human.
  25. My story is similar. The fog, feeling drained, body aches, etc. for years. I must have been gluten intolerant for years before the symptoms started showing. At least now, I know. Got tested at the doctors (blood test) and it came back negative. I've done the research and found that I would have to do a gluten challenge for 12 weeks and then be tested...
