You could have a delicious salad of cheap salad greens topped with sliced chicken breast, some pecans, and fruit (apple, strawberries, canned peaches) and a gluten-free dressing.   19. A colonoscopy won't show villi damage due to celiac disease, but a biopsy during an endoscopy (inspecting the small intestine) might...it can rule it in, but you could have celiac disease even without a positive biopsy. That's what I've gathered...hth!

    Sadly, I highly doubt American doctors will wake up. My Dr. that I saw yesterday actually told me that "doctors are discouraged from performing biopsies if everything looks fine." Can you BELIEVE that?!? How about on the microscopic level? I know a biopsy during my colonoscopy wouldn't be indicative of celiac disease, but for Pete's sake, what about something...

  23. I'm not actually diagnosed--I just got back from having the blood panel done!! However, if I were to have celiac, I'd be positive about it. It's an answer, and it's fixable. Ultimately, the gluten-free diet can be a lot healthier than a normal diet. What's so negative about that? But, I have to say I'm not all to positive in regards to doctors....

    Wow, Lizzy, I can certainly see why you are frusterated! I also have bad refluz, and I'm also worried about the condition of my esophagus! Some docs can be really insensitive.
  25. You know, I'm not sure...I would say they are not gluten-free. That makes me think of a month ago when I drank a vanilla SlimFast Optima during a class and I had the worst pain, bloating...everything. That's a good question!
