Exactly the first thing I thought when I heard what he was suffering from. It's a hard balance, trying to educate my friends and family about celiac and symptoms (since it's so undiagnosed) without sounding like an annoying broken record.

I was diagnosed with celiac about a month ago and have gone strictly gluten free (including cleaning out the kitchen, etc). I wasn't seeing much relief from only going gluten-free, so I reluctantly went dairy free as well. This is sad because do LOVE milk, cheese, etc - anything dairy! I had all of those symptoms a few weeks ago after I was diagnosed. It was a hellish week, but luckily for me only lasted about 6-7 days (I also got a wicked cold at the same time - no fair). Now I'm just trying to patiently wait for celiac symptoms to start going away! Funny story, my sweet husband asked yesterday what was going on with his stomach... -

I posted about this product last week - Organic Edamame Spaghetti (Open Original Shared Link) is lower carbs and has lots of protein. I actually like it a lot, and Costco carries it. I think the same company also makes black bean pasta, but I haven't seen it in stores. -

Karen, I don't think I have seen those noodles, but I'd be interested to try them! I think I'd only eat the edamame noodles if I'm making lunch for myself (that's what I've been doing since I'm off this week). I don't think they would pass muster for the family - especially since the texture is different from regular noodles. -

I too am interested in this. If you look at all the symptoms that I now know could be caused by celiac, it's a lot of things! But specifically, I have some markings on my teeth (not enamel issues, more like discoloration issues) that are typical of celiacs. My gastroenterologist also said that I have that "celiac look" (fair skin, long light eyelashes)... -

To be clear, I HAVE tried it - and I really like it. As long as you go into it knowing it won't taste like 'regular' pasta, it's a nice change up and a great source of protein.
