  2. Yes--I don't think anyone has tested how a wooden spoon retains gluten, but it's just generally known to...just as teflon is thought to.

You know more about celiac disease, healing, etc., so don't let anyone tell you that it won't work Looking at your signature: they are running tests, and it appears that dental problems contribute to celiac and that you can even predict whether someone is celiac or not by their dental enamel and ridges in their teeth.   6. I sent you all the big list...unzipped when in doubt, zipped when that was requested. I've only sent one person the zipped folder of individual lists. I recommend the big list because it has all the small lists packed into one. Then you can view the various sections in the list or print only some of the pages...if anyone wants the small lists as well ...

They are--some hospital nutritionists don't understand what gluten is... we always have to be alert about food I went to Columbia Presbyterian for my second biopsy and my operation, but they have the largest celiac program there, so they were very good about the diet both times. At least you're okay!
  8. Sorry, I'm back again ...not much on here in terms of Orlando that doesn't include Disney World. A lot of chains in the US have gluten-free menus, though, such as: McDonalds Wendys Outback Steakhouse TGIF PF Changs ...if you go to the "dining out" section or maybe "travel" you'd find information (menus) for all of these. Ha

  16. Yes--I don't understand because, besides the fear of these other complications, I feel so much better without the gluten. After being sick so long, I could never cheat and therefore, I don't really understand it, either.
  17. Off the board, [a member] said that [he or she] felt that most celiacs on these boards cheat on the gluten-free diet. I never have, never would, and question that you all do, as well....hence, the poll. Thanks! Besides, I think it would be interesting to see how many diagnosed celiacs adhere to the diet....though this probably wouldn't be very accurate...
  18. About the bread, I'd recommend that you try the Ener-G tapioca loaf and/or the Kinnickinick bread. Ener-G an Kinnickinick are probably the two most popular breads. None will be as light as wheat/white bread, but those two taste the closest. Post back here or under the products section if you can't find a good gluten-free version of some food.

  20. I'm not vegan, so I'm not going to be able to help you much on this, but I just want to say that health-wise it is very important that you get enough protein. Fat insulates and helps with nerve signals, carbs are the only thing your brain will use for energy (that's what's wrong with the low-carb diet...), but protein does basically everything else--muscles...
