  1. Bless you! Gonna try it! It would be so nice to have an alternative to panckaes (I've been living on those since I lost bread).
  2. Chelsea, I'm glad you posted. I belong to a food allergy group, and several people are trying to find a cake recipe they can use. None of us can use mixes, and the recipes we've found all contain ingreidents we can't use. This recipe isn't viable for us in its current form, but it almost seems like it could be modified, and I"m hoping someone...
  3. I thank you for the post. You've been very kind about trying to help me -- again, that always impresses me when someone I've never met takes time from their day to assist me with a problem like this. The book you listed is one I already had looked at a while ago. I seem to recall there really wasn't anything in there that would work for me -- but if...
  4. Thanks for getting back to me. I somehow missed your post. That recipe would at least be viable. I'd have to tweak it a bit, but if I could figure out how to make those adjustments, it would most likely work. Thanks for posting. P.S. Do you or anyone else here have ideas about reverse engineering a recipe? I found one this afternon that was originally...
  5. The alternative the xanthan gum is probably just another form of gum itself. That's my best guess anyway.
  6. I just got a call back from them -- I'd left a message. They do have some products that don't have those ingredients, but the flours they use are ones I've had problems with in the past. Even if I could tolerate those ingreidents, their prices are off the chat. I really think this is going to come down to finding a recipe that works with the ingredients...
  7. No, I didn't. I'll look for it. Thanks for getting back to me. I did just find your post, and I'm not sure how I'd begin to modify this. There are several ingredients in this recipe I'd have to leave out. The amaranth, arrowroot, currants, and brazil nuts would have to go. I'm not sure it would be a workable formulation at that point. Please...
  8. I appreciate the tip but that company uses gum in their products too. The search continues, and I'll elcome any ideas.
  9. I missed a few of your questions in my previous post. Concetrated plant starches have proven a problem, which is why I don't use those. Most of the baking powders I've been able to find were corn or potato based, and some contained gum. Baking soda is a much safer choice for me (and it does the same job, although finding the corect ratios can be really...
  10. Thanks for the reply. I say this is possible because it has, in fect, been donebefore. There was a bakery a few years ago that made bread with this list of ingredients. They have since closed, however, and they never published a recipe. I haven't been able to find anyone who owned or worked for the company. Again, this has been done before. I'm still...
  11. Have you seen their cookbook? I'm just wondering if it would have any recipes that dont call for gum. All of the books I've read so far had recipes that called for one of more types of gum. I haven't yet found one that doesn't call for it.
  12. I'd like to thank you and the other kind poster who responded to my reuqest for information. I know this is a daunting task. This one sounds like the easiest to attempt (I'm not sure how I'd substitute the amarant, currents, arrowroot, and other ingredients from the other recipe). I'll be sure to give this a try. Thanks again.
  13. I can't use it but I'm hoping to find alternatives.
  14. Thanks for the reply. The list of ingredients I gave is what I know I can work with. My allergies are so vast that it seemd easier to list things I know I can use. I can't do fruits and veggies, for the most part. Carrots and cauliflower are like peanuts for me. I've had problems with whole millet, so I've only been using the flour. I've had to give...
  15. I posted this before but nobody understood my headline, so I'm trying again. I have many food allergies, and I'm struggling to find a bread recipe I can work with. I want to come up with a recipe for sandwich bread. However, the ones I've found thus far all contain things I'm allergic to. My allergies are extensive, so I'm including a list of ingredients...
  16. I wish I could help, but I can't use the ingredients you're working with.
  17. Thanks for the reply. There's honestly no reason that I shouldn't be able to make sandwich bread with these ingredients. It's technologically possible, but the gluten-free baking companies haven't tried it because it's so convenient to simply throw in various types of gum and other harmful allergens This is a vast forum and I'm still hoping someone will...
  18. Wow! You're really fast! Okay... I cannot have flax. Where gelatin is concerned, it would probably have t be a pure pork gelatin (and I haven't been able to find one -- everything at my health food store had gum or other ingredients tossed in).
  19. lorka, Thanks so much for responding. I appreciate your willingness to try and help me. One of my problems is that I haven't even found a recipe that would make a good starting point. The recipes I've found contained a rediculous number of ingredients -- there was no way to modify them. Leaving out xanthan gum wouldn't have mattered because...
  20. I'm hoping someone here will be able to figure this out. I know it's possible... I just don't have a recipe.
  21. P.S. This is possible. Hopefully someone here can help me figure out a recipe.
  22. If you happen to find any simpler pizza crust recipes, please let me know. That one has many ingredients I'm allergic to. The list of ingredients I can work with is: millet flour rice flour (white or brown) baking soda vitamin C salt honey or agave nectar olive or safflower oil If anyone has ideas, I'd appreciate them. I do miss pizza crust...
  23. Thanks for the reply. My list of allergies is extensive, and it includes gum -- which is one of the most difficult allergens to deal with. Where comfort food is concerned, I'd love to be able to eat sandwich bread -- that was always a comfort food. However, I can't find a viable recipe. I know it's technologically possible to make a bread I can eat...
  24. None of these are foods I can eat. I'm holding out hope that someone will post a comfort food I can have.
  25. I'm trying to come up with a recipe for sandwich bread. However, the ones I've found thus far all car for one or more types of gum.
