Chelsea, I'm glad you posted. I belong to a food allergy group, and several people are trying to find a cake recipe they can use. None of us can use mixes, and the recipes we've found all contain ingreidents we can't use. The alternative the xanthan gum is probably just another form of gum itself. That's my best guess anyway. -

I just got a call back from them -- I'd left a message. They do have some products that don't have those ingredients, but the flours they use are ones I've had problems with in the past. Even if I could tolerate those ingreidents, their prices are off the chat. I really think this is going to come down to finding a recipe that works with the ingredients... -

No, I didn't. I'll look for it. Thanks for getting back to me. I did just find your post, and I'm not sure how I'd begin to modify this. There are several ingredients in this recipe I'd have to leave out. The amaranth, arrowroot, currants, and brazil nuts would have to go. I'm not sure it would be a workable formulation at that point. I missed a few of your questions in my previous post. Concetrated plant starches have proven a problem, which is why I don't use those. Most of the baking powders I've been able to find were corn or potato based, and some contained gum. Baking soda is a much safer choice for me (and it does the same job, although finding the corect ratios can be really... -

Have you seen their cookbook? I'm just wondering if it would have any recipes that dont call for gum. All of the books I've read so far had recipes that called for one of more types of gum. I haven't yet found one that doesn't call for it. -

This one sounds like the easiest to attempt (I'm not sure how I'd substitute the amarant, currents, arrowroot, and other ingredients from the other recipe). I'll be sure to give this a try. I can't do fruits and veggies, for the most part. Carrots and cauliflower are like peanuts for me. I've had problems with whole millet, so I've only been using the flour. I've had to give... -

Thanks for the reply. There's honestly no reason that I shouldn't be able to make sandwich bread with these ingredients. Wow! You're really fast! Okay... I cannot have flax. Where gelatin is concerned, it would probably have t be a pure pork gelatin (and I haven't been able to find one -- everything at my health food store had gum or other ingredients tossed in). -
