I checked, and our next class is on Tuesday, September 26th in the Little Theater at the Provo Macey's. The classes start at 7 pm, and go for about one hour. I know of at least one celebrity that employs a gluten-free chef. I've also had people request that I bake for their autistic children. That is one place where you might be able to make such a career work for you, and help overwhelmed parents at the same time.

See if you can check out the book "Saving Dinner" by Leanne Ely from your library. It's not technically a gluten-free cookbook, but most of the recipes are gluten-free or are VERY easily modified (corn starch instead of flour as a thickener). I love it. I'm not at home, so I don't have my recipes handy. Try using a regular recipe, and substituting 3/4 c. Bette Hagmans' Featherlight mix and 1/4 c. Bette Hagman's gluten-free mix per 1 cup of regular flour that the recipe calls for. Then use 1/4 - 1/2 tsp. per cup of flour. good luck! Betsy

My first thought was: Host a week-long family reunion. Tell everyone that you are going to plan all the meals, snacks, etc, and all they have to do is pitch in money to reimburse you. Then just plan all the meals gluten free. My family reunions do that, because 4 of my aunts have celiac. It's really not that hard to do, and no one feels deprived. If... -

Mono is a good suggestion - my good friend's son had fevers and lack of appetite for a long time, and they finally figured out it was mono .. . of course, there's not much you can do for it, but knowing what the cause behind the illness was makes things much easier to cope with. Good luck! -

Bette Hagman has a great granola recipe in her original "Gluten Free Gourmet" cookbook. I think it's on page 196 (isn't it sad that I have recipe book pages memorized?). It makes great granola bars, too. -

Blue Chip muffins are very good, I must agree. As far as making zuchini bread goes, try substituting 3/4 c. Bette Hagman's featherlight mix and 1/4 of a cup of Hagman's gluten-free mix for each cup of flour (so if the recipe calls for 4 cups of flour, use 3 of featherlight and 1 of gluten-free mix). Ordering things online is a great idea for baking mixes and things like that (pasta, too, I bet). My advice would be to call the lab where the tests were run (or you can look up their website) and ask the lab techs what the numbers mean. They can generally interpret those numbers for you.
