  7. I suggest that you don't let it raise so much before you put it in the oven. It is gluten that allows normal bread to maintain it's structure when full of air.   15. Soy flour, Brown Rice flour and nut flours (like almond flour, etc) need to be refrigerated because of the higher fat content. I also keep my potato flour cold.
