Check out the cookbook "Saving Dinner" by Leanne Ely - it's a great book. It wasn't intended to be a gluten free cookbook, but many of the recipes are naturally gluten-free. I'd definitely toast your bread crumbs to avoid the "mush" problem. If you are making your own bread in order to make stuffing (not using store bought bread), I have a great way to make bread cubes for stuffing. As far as getting bread all over your hands goes, try getting your hands wet with water before you spread it out in the pans. And just re-wet your hands if the bread starts sticking to you. It works well for me! -

Actually, I think that the current belief is that the cows developed the disease so widely because they were fed animal protein in order to increase milk production (ie, when there were sick cows, they'd put them down and use them for cow food). If I were you, I'd tell the doctors office that, if they are unwilling to accede to your request, you will be putting them in contact with your lawyer. I'm not a real fan of lawsuits, but this office needs to know that they are putting themselves in danger of legal action. One of the things that my mother thought was oddest about going gluten free was that she lost the urge to chew ice. She always thought that she "Just liked" to chew ice, and didn't realize that chewing ice is a sign of Pica, which comes from low iron levels. In my opinion, it's the cocoa ones all the way. The fruity ones are just too sweet. And the cocoa "rice crispy" treats are FABULOUS if you add a 1/2 c. of coconut to the marshmallows after they've melted (at the same time you add the cereal). It tastes a lot like the Girl Scout Samoas cookies. Yum! -

Here's the one I use all the time. We freeze leftovers in ziplocks and then reheat them in the toaster. They are great either way (fresh or re-heated). You do want to be sure that your waffle iron is CLEAN, CLEAN, CLEAN. I missed it! Totally forgot! I also had family in town, so that is part of the reason I forgot, but I'm kicking myself anyway. Our last class went okay. There were 11 people there (including my Dad) and only one had to cook gluten free . . . most were just there because the soup recipes sounded good! (And they were!) We told everyone why we cook...

There's a gluten free store in Taylorsville, UT. It's called Against the Grain, and they only carry gluten-free stuff. The owner's not making a ton of money for herself, but she is able to pay her rent and keeps up the store so that when others are diagnosed they've got a resource to help them out as they start the diet. It's great!

I missed the GIG meeting . . . we had someone come to our class who had also been at the meeting, but she said she thinks the dietician got to the stuff she really wanted to hear after she left to come to our class.
