  1. I think (though the posters from England will have to chime in with more info) that there are some advantages to being clinically diagnosed in England that don't exist in the US. For instance, I have heard that those who are diagnosed with celiac get their gluten free foods at some sort of a discount because it is a prescription for a disease. So pursuing...
  2. Hello, again! I double checked, and angel food cakes don't have to have xanthan gum in order to stick together. So just get any old recipe and use potato starch or tapioca starch instead of the flour the recipe calls for. You can also add a tsp. of almond or vanilla flavoring.
  3. I don't know of any support groups there, but I've got a cousin who has Celiac in Fort Meyers. I'll ask her if she knows of a support group and then get back to you. In the meantime, search the boards. There's lots of good information from people all over . . . isn't the internet great?
  4. Nope, not on Amazon. We are just privately publishing it . . . we figured if we had enough people interested in buying it that we'd see about having a larger run done through a real publishing house. We'll have copies available at the beginning of Dec. If you'd be interested in buying one, send me a PM. (Don't want to break the board rules by promoting...
  5. Just wanted to drop a quick welcome and a little info . . .but I'll have to be quick 'cause I've been on too long and my children are starting to suffer from negelect! The most sensitive of the celiac blood tests is 86% sesitive (according to my husband's lab magazines . . . he works in a hosptital lab). So it is not really all that unlikely that your...
  6. This kills me! I kept wondering where he was, but I didn't want to bug him by starting a "Where are you" post. I checked his "last time he was on the boards" info on the 30th (which was the day after his last visit, evidently) and was reassured because he'd been on just the night before. Darn it. Ursula . . . if you get a chance to communicate with...
  7. There are a lot of really good cake recipes on the www.eatingglutenfree.com website. The eclair cake is really good . . . Also, it's easy to make an angel food cake that is gluten free. Just use tapioca starch or potato starch in place of the flour. I don't think you even need to add xanthan gum to help hold it together . . . I'll go double check and...
  8. ptkds - I've got a great bread recipe that you can actually make by hand. (My aunts made 5 or 6 batches by hand IN A ROW! I think their arms probably hurt later, but it proves that it's doable!) I'm pretty sure you could do it with a hand-mixer, too, because it's more like really thick cake batter than normal bread dough. And, hey! If 3 of...
  9. Oh, you know. Stay home, take care of kids. Do it again the next day. I just finished "final editing" a gluten free cookbook my friend and I are writing, so I've got more time now than I did a week ago! We just did a gluten-free cookies class at the orem macey's . . . sugar cookies, gingerbread, and peppernuts. In fact, I still have peppernut dough...
  10. Modifying regular yeast bread recipes is tough. Does it have eggs in it? Is it a stiff (needs to be kneaded) dough?
  11. Sweetfudge - My friend and I just sent a gluten free cookbook to the printers, actually! My advice is to decide what format you want to put all your recipes in BEFORE you start to type them up . . . otherwise it's a HUGE headache changing them all. And, it really does take a LOT of time to create a cookbook, even if you already have createdall the...
  12. I could be wrong, but I think the UK requirement for "suitable for celiacs" is less stringent than the US recommendations. For example, I know that in some places in Europe, wheat starch is considered to be gluten free. However, a lot of celiacs still react badly to it . . . even though it is supposedly "gluten free" (because, they say, that it no longer...
  13. This summer a health food store opened in Chillicothe, MO. The address is 424 Washington. I'm not sure if they are still open . .. the last couple of times I've called them, no one has picked up the phone. But I know that they had a gluten free section. So if you're anywhere near Chillicothe, that might be an option. If it will take you a while to drive...
  14. Is your son feeling well enough to do work at home? Brigham Young University has an independent study program that he could work with . .. you can use the classes for dual HS/college credit. It might be too expensive if he has to take more than a class or two, but it might help him keep up with his High School requirements while he's at home. Here...
  15. Is this the article you mean? Open Original Shared Link
  16. It could also be the soy itself . . . have you been eating much soy recently? Perhaps the increased amount in the sauce "got you". Or . . . you might just have a bug. It is that time of year. . . Or it could be the gv soy sauce . . . hope someone else will chime in with more helpful info.
  17. I would also ask to have your hormone levels checked. Problems with those can lead to similar problems as well.
  18. Nope. It's definitely Utah! We've got the U of U (which did a huge genetic study on celiac . . . which has now moved to UC Santa Barbara, I think), fabulous GIG support groups, and TONS of people who were diagnosed during the U of U study. Just before Halloween I overheard some people in the grocery store looking for "gluten free, chocolate free,...
  19. You can make gluten free garlic bread, too. I invented this spread after looking at the ingredients on a commercial garlic bread spread. Just make your favorite gluten-free bread, then use this spread on it. It's really good! 1/2 c. Butter or Margarine 1/4 c. Parmesan cheese 1 tsp. Garlic powder 1/4 tsp. Onion powder 1/2 tsp. Italian Seasoning...
  20. You came to the right place. I wish I could offer more than a welcome and a "This will be okay". You know, right now you are probably still reeling from the very idea of celiac and all the changes it will mean. But things really do get better. There are so many things you can still eat - fruits, vegetables, meats, eggs, on and on. For quite a while,...
  21. Kody - If you have a deferral because of medical reasons, I don't think they can take your scholarship away. Double check with your scholarship office, though. Also, have you tried pulling milk out of your diet as well? Casien (the protein in milk) can cause that brain fog feeling, too. Just an idea. Good luck!
  22. My mother's main symptom (that she noticed) was constipation. She wasn't diagnosed until she was about 50, and even then she wasn't looking for answers for herself. She only got tested because my sister was having symptoms. Long story . . . anyway, her celiac had also caused nasty anemia (her doctor told her she had the ugliest blood he'd ever seen) and...

    ARCHIVED Save Me!

Outback Steakhouse, PF Changs, and even some Old Spaghetti Factories have gluten free menus. Outback's Chocolate Thunder from Down Under is a flourless brownie . . . so you can eat that! Good luck! Okay, so I just realized that Nantzie posted this information right before I did. Sorry! I skimmed her post too fast!
  24. Check out the cookbook "Saving Dinner". The recipes are portioned for 6 people, but you can cut them down or have leftovers. And they are all really good. Other easy dinners: Breakfast (gluten-free pancakes, scrambled eggs, etc.) Burgers broiled in the oven tacos (use fried corn tortillas) BBQ chicken (dice chicken, then sautee in gluten-free...
  25. Just wanted to add a quick welcome! You sound like this is helping a lot already. Keep checking in here if you have questions or need encouragement . .. that's what we're here for!
