Are the cookies supposed to be crisp and crunchy? Or are the supposed to be soft? If they are supposed to be crispy, probably using a gluten-free mix plus some xanthan gum will be enough to make the adjustment. Kolka - For most recipes that call for sour cream, you can just substitute an equal amount of dairy free milk (rice, soy, almond, whatever) plus 1/2 - 1 tsp. of vinegar or lemon juice. Another suggestion is to sprinkle some potato starch on your dough to keep it from being quite so sticky (just like using extra flour with wheat-based cookies). That's what I do with my recipe. -

Actually, the most sensitive of the currently used celiac tests is only 86% sensitive. (My husband works in the lab at our regional hospital, and brought home a copy of a story in one of his lab magazines, so that's how I know.) I just went and got my copy of the article. For more recipes, check the parent page of this site, Celiac.com. Also, try looking for gluten free cookbooks in your local library. The recipe book "Saving Dinner" by Leanne Ely is also really good . .. it's not deliberately gluten free, but most of the recipes are gluten-free naturally. The website www.eatingglutenfree.com also has a lot of good recipes... -

BamBam - Lots of people do suffer from depression and anxiety as a result of celiac. (Check out the "Questions" thread in the "Pre-Diagnosis" section of the board - many people talked about depression and even severe anxiety.) The good news is that if your anxiety is stemming from gluten, it ought to wear itself out in a while. Good luck!

Feeling bad about yourself is not at all surprising, in the circumstances. You probably look at the things you feel compelled to do and think: "WHY do I have to do these things? What is wrong with me that I can't make myself ignore these senseless worries?" But it's really not your fault. Your brain is just misfiring . . . and that can happen to anyone... -

If you've got a gluten free white bread recipe that works well, try taking out 1/3 or 1/4 of the flour and replacing it with the same amount of Teff flour. You can also add sunflower seeds or other nuts to add more protein/texture. My sister always makes her bread with Teff, and really likes it. -

Have you ever sat down and listed all the foods that you still can eat? Fruits, veggies, meats, etc. Also, list all of the meals that you can make with those things you can eat .. . soups, baked meats or fish, cobb salads, baked potatoes, twice baked potatoes, homemade tacos (YUM!), fajitas in corn tortillas, orange pork chops, etc. Making these lists...

Does it need to be a pumpkin recipe? If so, I've got a pumpkin custard recipe that will knock your socks off. It's GOOD. I don't have an apple fritter recipe, but someone earlier mentioned a doughnut recipe from Open Original Shared Link that had turned out very well . . . maybe you could look up a "normal" fritter recipe, determine how it differs from a "normal" doughnut recipe, and then modify the gfutah recipe into an apple fritter recipe. I just dry my bread cubes in the oven on a low temperature because I never remember to leave it out to dry. I don't think that the bread really needs to be toasted in a toaster .. . . of course, I guess it would depend on the bread recipe you are using . . . some gluten free breads MUST be toasted in order to be palatable, so that might be the reason . ... -
