  1. Flax has an awful lot of fiber and definitely helps keep things moving through . But unless you have a specific problem with flax or were eating a WHOLE lot of flax seeds in that bread, I don't think it should caused major problems. Hmmm . . .
  2. My sister just made a gluten free almond poppy seed cake (with a lemon glaze). It was really good .. . would you like that recipe?
  3. Check out the "OMG" thread . . . Rachel - 24 and Rinne have both been diagnosed with Lyme recently, so there is more discussion about this in that thread. (The last 20 or 30 pages or so )
  4. I personally would not worry about the crockpot, as it is hard-glazed and is unlikely to absorb gluten from the foods cooked in it. Be careful with wooden spoons, cutting boards, etc., as those are more pourous and are more likely to retain old gluten protein in the cracks/grain. Best Wishes!
  5. Bud - Just wanted to add that when I post a link to a previous thread, I'm not doing it out of irritation . . . it's more that I want to make sure that the poster doesn't miss some good information that I knew was submitted before. That's because the same information doesn't always surface. For example, there was a "What's your favorite soup" thread...
  6. Use the standard recipe, but substitute cocoa pebbles for the rice crispies and add 1/2 c. coconut. MMMMMM!
  7. Totally Agree with Nini. Good job!
  8. Just wanted to say welcome and give some words of encouragement: At least when all of your children are gluten free, you don't have to worry about anyone feeling left out because "THEY got to have Cheerios, why can't I?!?". Or "How come SHE always gets to have the gluten free cookies?" This way they all eat the same things and don't have a chance to...
  9. I don't really have a lot to add to the other answers. I just wanted to say welcome to the board. Your son's problems could easily be related to food intolerances, but there may be something else going on. My sister's daughter recently tested negative for celiac, but the doctor did find that her Thyroid levels were very high, and her Human Growth Hormone...
  10. Kimber - How did that cake come out?
  11. liz - I don't think it's awful to want to find out what's wrong - it's actually more like responsible mothering! You know, you see all of your son's over-the-top reactions, so you are the one who is most likely to realize that there is something not right about them. For example, you've already realized that apples are a trigger for him. This means...
  12. Here's another Cream Cheese Frosting recipe . . . delicious! 1 8 oz. pkg cream cheese 1 stick margarine or butter 1 lb. powdered sugar 1 tsp. vanilla Cream together the cream cheese and margarine until all lumps are gone. Add powdered sugar and mix well. Add vanilla and mix well. Store any leftovers in the fridge.
  13. Are they crumbly when hot, or after they've cooled fora while? Gluten free breads keep best, I've found, if you slice them about 1 hour after they come out of the oven, and then refrigerate or freeze them in a ziplock bag. Then reheat the slices you want to eat in the microwave. If you reheat them until they are warm (20 - 30 seconds) they ought to be...
  14. There was a thread here a while ago on this topic that garnered quite a few recipes. Here's a link: Open Original Shared Link There are a lot of great gluten free soup recipes on this site, too: www.eatingglutenfree.com Have a good time making soup! (We're making taco soup tonight . . . so good!)
  15. CONGRATULATIONS! I missed your initial posting, but I'm still thrilled to hear that your husband is feeling so much better. If you ever need recipes or help, come on back and ask. We'll be happy share! Good luck on further improvements!
  16. Kimber - This recipe should work for you. There's no soy or gluten, I'm pretty sure there's no corn, and you can replace the sour cream with 1 c. rice milk and 1 tsp. vinegar. (My sister does that all the time, as she's dairy free, too.) It's a fabulous cake . . . no one will know it's gluten free if you don't tell them! I'm not sure about frosting...
  17. Just another possibility to help with the diaper rash: try using Lansinoh (it's ultra-refined lanolin). It's not medicated at all, it just puts a barrier between the baby's skin and the wet diaper. I once (only once!) used Desitin on my oldest daughter, and she screamed and screamed . . . it was awful! So from then on we just used Lansinoh . .. it really...
  18. Hey all you Utahns! We've got another gluten-free cooking class going on tonight at the Provo Macey's. It starts at 7 pm and is free. We're going to do Thanksgiving things - stuffing, rolls, baked apples, and pumpkin custard. It'll be fun, and really yummy! If you want to sign up for the class, just call the Provo Macey's (801-356-3216) and ask the...
  19. Totally! Working on Baby-Steps!
  20. Lindt truffles have barley malt in them (at least the milk chocolate ones do), but I'm not sure about the rest of their products . . . . It looks like the ingredients were okay . .. but there might have been cross contamination. OR, it could have been the wine . . .
  21. I have a Blendtech mill (by K-Tech), and use it for rice all the time. It's so much cheaper than buying rice flour! K-Tech actually has an outlet store in Orem, UT, so you can walk in and look at the mills before buying them. Also, they give you a discount for buying in bulk - they're 199 apiece for 1, 189 apeice for 2 and 159 apeice for 3 or more. My...
  22. If I were you, especially because you only need a car for 8 to 15 months, I'd look through the small dealerships (even the newspaper) and get a used car. You can get an older car that's in good mechanical shape for $3000 or so. It will get you where you need to go (unless you need it to climb Mt. Everest or something), and you will be able to pay the thing...
  23. The anti-Tissue Transglutaminase test measures whether or not your body is making Tissue Transglutaminase. That is what your body uses in an attempt to heal your intestines after they have been damaged through eating wheat. The test is 95 - 100 % specific, which means that if it comes back positive, it is showing that you have celiac, and not something else...
  24. I think the reason we focus so much on desserts is because we feel so deprived. We feel like we NEED to have a replacement for all those things that we probably wouldn't be eating all the time if we weren't gluten free. I know my mom would walk through a grocery store and then buy and eat a Snickers, just becase she "could". So this diet can end up being...
  25. Karen - It's really not that bad! I don't have celiac, I just cook like one (for family members), and I refuse to cook anything that I am unwilling to eat. Admittedly, there are a lot of gluten-free foods out there that are gritty and just blechy in general . . . but not all of them are like that! In fact, during the last 5 years there has been an...
