    Coconut Macaroons #2 (Gluten-Free)

    This recipe comes to us from Joe Bacon.

    Preheat oven 350º

    Ingredients:

    • Two 7 oz. packages of flaked coconut (~5 cups)
    • One 14 oz. can eagle brand condensed milk (not evaporated)
    • 2 teaspoons vanilla
    • 1 ½ teaspoon almond extract

    In a large bowl combine coconut, condensed milk and extracts; mix well. Drop rounded teaspoonfuls onto generously greased baking sheet. Bake 8-10 min. or until lightly brown. Immediately remove to cooling rack. Optional: drizzle with melted chocolate chips.

    This is an excellent idea! but instead of using condensed milk, I used unsweetened soy milk--that way, it is gluten, wheat and sugar free!! :)

    I thought this looked like a good idea too since they are so simple, but the do not hold together... I think maybe some egg whites may have helped...back to the drawing board with this one!

    1 cup butter (two sticks)
    ½ cup brown sugar
    1 cup granulated sugar
    2 eggs
    1 teaspoon vanilla (Cooks vanilla powder is great)
    1-½ cup brown rice flour
    ½ cup potato flour (NOT potato starch flour)
    1 teaspoon baking soda
    1 teaspoon salt
    1 pkg. milk or semisweet chocolate chips
    Cream butter (can use dairy-free margarine or Crisco if necessary), sugars, eggs and vanilla. Mix in dry ingredients, then chocolate chips. Drop by rounded teaspoons onto un-greased cookie sheet.     3/8 cup brown sugar, packed
    3/8 cup granulated white sugar
    1 large egg
    ½ teaspoon vanilla extract
    1 cup instant masa de maiz (The masa flour is finely ground hominy normally used for making tamales or corn tortillas, and is available wherever Mexican staple ingredients are sold)

    1 pinch salt (optional)
    ½ cup chopped walnuts or pecans (optional)
    1 cup (6 ounces by weight) chocolate chips
    Beat butter, sugars, egg, and vanilla until fluffy. Add masa, soda, and salt; mix well. Stir in the nuts and chips. Roll the batter into balls about one inch in diameter or slightly larger.     1 whole egg
    1 egg white
    ¼ teaspoon salt
    ½ cup sugar
    2/3 cup sifted gluten-free all purpose flour or Bette Hagmans 4 Flour Blend
    ½ teaspoon xanthan gum
    2 tablespoon melted gluten-free butter, cooled slightly
    ½ teaspoon gluten-free vanilla
    If too thin and runny, add another spoon of flour, or cocoa. Beat the eggs and salt in a small bowl with fork until well blended. Beat in the sugar and beat until sugar is incorporated and the egg has lightened in color, about 1 min. Add the flour and xanthan and stir slowly until all flour is moistened. Beat another 15 seconds to remove all lumps. Add melted butter and stir until well blended. Bake using pizzelle iron.
