    Enchiladas Potosinas (Gluten-Free)

    Easy to make, and yummy to eat, these enchiladas are more like quesadillas.

    Celiac.com 11/22/2016 - These aren't enchiladas like you might be used to. These are typical of the cuisine of the cuisine of the state of San Luis Potosí, in central Mexico. They are more like quesadilas. Make them with fresh, home made tortillas if you can. Yum!

    Ingredients:

    • 1 dozen corn tortillas (or use fresh masa and make from scratch)
    • ¼ cup vegetable oil
    • 5 ounces of saltierra potosino cheese, or Mexican-style cheese like Manchego
    • 4 chiles chinos, or guajillo chiles
    • salsa verde, as desired
    • salt

    Directions:
    Cook the red chiles, grind and strain them, taking care not to add too much water. The sauce should be a bit thick.

    The filling is prepared with grated cheese, cooked tomato, if desired, and a splash of salsa verde.

    Warm the small tortillas lightly in a frying pan, then add a little of the filling, and double them over like quesadillas, and cook them in the cast iron frying pan, taking care to turn them only once. If using fresh masa, form small tortillas, add a little of the filling, double them like quesadillas, and cook them on the comal or frying pan.

    Serve warm, with guacamole, refried beans, and chiles in vinegar. Top with red chile sauce as desired.

    1 package corn tortillas
    1 can refried beans
    ¼ onion diced
    ½ green pepper diced
    ½ red pepper diced
    ½ cup cheddar cheese grated
    Salsa - I dont know how much -- just for the top
    In large bowl, mix beans and veggies and a little bit of the cheese. Grease 9X13 pan. With a tortilla in hand, place a large spoonful of filling in tortilla and roll-up. Stick a little of the bean mix on the edge of the tortilla to glue it in place, and lay seam-side down in pan. Do this until tortillas or filling runs out. Pour a little salsa over all enchiladas, spreading thin, just so the corn tortillas dont dry. Bake for about 20 minutes at 350F. Top with cheese and bake another 5 minutes.

    Makes about 3½ cups.
    3 tbsp. vegetable oil
    1 medium-sized onion, chopped
    3 cloves garlic, minced
    2 tbsp. gluten-free all purpose flour
    1 (4-oz.) can mild green chilies, chopped
    1 (14½-oz.) can diced tomatoes
    1 c. chicken broth
    1 teaspoon chili powder, preferably Ancho chili powder
    1 teaspoon salt, or more to taste
    In a heavy saucepan, warm the oil over medium heat. Add the onion and sauté until well-softened, about 5 minutes. Stir in the garlic and sauté for an additional minute. Add the flour and continue cooking for another 1 to 2 minutes. Mix in the chilies and tomatoes. Pour in the broth and add the chili powder and salt. Bring to boil, reduce heat to low simmer and cook for about 15 m...

    1 cup glutinous rice flour
    1 cup white rice flour
    ¼ cup tapioca flour
    ¼ cup brown rice flour
    ¼ cup corn flour (yellow ground flour from the Middle Eastern Store)
    *If you dont keep corn flour on hand, add something else! I dont consider the flour mix critical -- whatever you like and works for you.
    1 Teaspoon salt
    a little sugar
    1 heaping teaspoon baking powder
    1 ½ Teaspoon oil or shortening
    ¼-½ cup water as needed

    Makes 8-12 enchiladas Recipe for Green (Verde) Sauce:
    Puree in blender/food processor: 2 cups tomatillos (Mexican green tomatoes), 1 small garlic clove, 8 to 10 sprigs or fresh cilantro, and a tiny piece of Serrano raw green chili or jalpeño, ¼ cup diced white onion, and 1 teaspoon salt. Cook sauce for several minutes in a small pot with a teaspoon of oil until it changes color.
    Recipe for Red Enchilada Sauce:
    1 cup chopped onions
    2 cups canned tomatoes
    1 - 8 ounce can tomato sauce
    2 garlic cloves, minced
    Pinch of cayenne pepper
    10 drops hot sauce (Tabasco)
    ½ tablespoon plus 1 tsp. chili powder
    1 tablespoon honey
    ¼ teaspoon cumin
