    Gnocchi (Gluten-Free)

    Celiac.com Sponsor (A12):
    1 kg (2 lb) cooked mashed potatoes
    1 cup white rice flour
    ¾ cup potato starch
    ¼ cup corn starch
    1 tablespoon margarine
    1 tablespoon grated parmesan (optional)
    2 eggs
    salt

    Mix all ingredients with hands. Knead lightly. Shape small portions of the dough into long snakes. On a floured surface, cut snakes into small pieces. Place a few gnocchi in salted boiling water. As the gnocchi rise to the top of the pot, remove them with a slotted spoon. Repeat until all are cooked. Cover with hot tomato sauce and serve. You can he re-heat them using a microwave oven.

    Amazing!! Even my husband loved them. I am so happy to find a recipe for gnocchi. One of our favorite dishes is gnocchi with fresh homemade pesto. Thank you for sharing. Now we can all indulge instead of me just watching my family enjoy!

    I made this recipe tonight to rave reviews! My whole family loved them, and they were so much lighter than the wheat version. Instead of mixing the rice flour, potato starch, and corn starch, I used 2 c. King Arthur brand gluten free flour which is made up of rice flour, tapioca starch, potato starch, and whole grain brown rice flour. I also added a teaspoon of xanthan gum. Thank you so much for posting the recipe.

    This recipe is AWESOME with Okanawan purple sweet potatoes instead of plain white potatoes. (They're also called purple yams and can be found at an Asian food store. They're high in fiber and antioxidants and have a gorgeous purple color.) If you can deal with eating gnocchi that's a non-traditional purple and slightly earthly and sweet, you'll love it.

     

    Also, a different website recommended frying the gnocchi instead of boiling them. I have to admit, I"m not really fond of frying but it was SUPER good this way -- VERY rich! So that's another option, if you can deal with the extra calories.

    This recipe comes to us from Ann Sokolowski.
    The following is a gluten-free recipe for Panforte, a wonderful Italian fruitcake from Sienna which dates back five hundred years! It must be good if it has lasted that long, right? The dried fruit mixture is predominately figs and dates, but a combination with other fruits works well, too. Note the use of the rice crackers. Typically, a special rice wafer is used to top it, but this is usually only found in certain specialty stores.
    Makes: 14 servings
    Prep: 30 minutes
    Bake: at 375 for 35 minutes
    Stand: 24 hours
    For Preparing pan:
    Nonstick vegetable cooking spray
    (preferably butter-flavored)
    1 package (3.5 ounces) thin crunchy unflavored rice crackers, pulsed in
    food processor until uniformly...

    Ingredients:
    1 package of gluten-free rotelli pasta
    1 package grape tomatoes, halved
    4 ounces feta cheese, crumbled
    ¼ pound of deli salami, cubed
    Chopped Fresh Basil
    ½ chopped red pepper
    2 chopped green onions
    Dressing:
    1/3 cup olive oil
    3 tablespoons lemon juice
    2 garlic cloves, minced
    1 ½ teaspoons dried oregano
    ½ teaspoon salt
    ¼ teaspoon pepper
    Directions:
    Wisk together dressing ingredients, then pour over salad and pasta. You can add black olives and artichoke hearts if desired.

    Ingredients:
    2 tablespoons olive oil
    1 cup red onions chopped
    pinch of sea salt
    pinch of fresh ground black pepper
    4 cups sliced mushrooms
    2 cups cooked diced chicken breast
    3 garlic cloves
    1 cup Arborio rice
    4 cups gluten-free chicken broth stock (homemade is best)
    2 roasted red peppers, skins removed, and chopped
    ¼ cup green onions
    2 teaspoon fresh thyme
    ¼ cup fresh grated Parmesan cheese Directions:
    Use a bit of oil to sauté onions, then add salt and pepper. Add mushrooms, chicken and garlic and sauté for several minutes. Add rice and a bit more oil , then add ½ cup of stock and mix until rice absorbs it. Continue cooking until no more stock left (about 20 minutes), then remove from heat and add rest of ingredients and serve.

    This is the real Italian way, mostly vegetables. The pasta and beans are more of an Americanization in our Minestrone.
    Serves:  2-4
    Ingredients:
    1 cup of your favorite organic Italian red sauce
    2 cups purified Water with 2 Tblsps. Braggs Aminos or organic Chicken Soup stock
    ½ cup fresh or frozen organic String Beans
    ¼ cup organic Onion, chopped
    1 medium organic Carrot, sliced
    2 large leaves of organic Swiss Chard, cut in small pieces

    ½ tsp. organic Fennel Seed, crushed
