    Lentil Soup (Gluten-Free)

    Ingredients:
    1-2 tablespoons of olive oil
    2 medium, (1 large) onion, chopped
    2-3 cloves garlic, chopped fine
    7-10 cups of chicken or vegetable stock (can also use ½ water)
    1 cup of dried lentils
    2-3 carrots, chopped
    3-4 ribs celery, with tops, chopped
    1-2 small potatoes, diced
    ½ cup of chopped parsley

    Spices:
    1 bay leaf
    2 tablespoons fresh basil or 1 tablespoon dried
    ¼ to ½ teaspoon of cayenne pepper
    ½ teaspoon salt
    ¼ teaspoon pepper
    1 teaspoon oregano

    Optional:
    ½ pound of sausage (links or loose) of your choice
    1-2 tablespoons of olive oil

    Directions:
    1. If you are using sausage (Cut the links in ½ inch sections.), you may need a bit more oil to cook it in. Use the same soup pan that you will fix the rest of the soup in. Heat oil. Cut up the sausage and brown, then lower heat to cook through. Set aside in paper towels to catch the oil.

    2. If you have cooked sausage you will have a little oil left in the pan. Dump in the onions and garlic. Add oil if needed. Scrap the bottom and pull up the sausage bits. Cook onions/garlic until color changes.

    3. Add liquid (start with 7-8 cups of stock/water and add remainder as needed), carrots, celery, potatoes, half of the parsley. Wash and pick over the lentils. Remove any debris and hard lentils. Add the lentils to the soup.

    4. Add all the spices, starting with ¼ teaspoon of cayenne pepper. Add more (cayenne or black pepper, salt) as desired after cooking for 1 ¼ hours (see below).

    5. Bring to a boil. Cover and simmer. Cook for 1 ¼ hours. Check the lentils. They should be expanding and softening. Add sausage, rest of parsley. Check for seasonings. Cook for another 20-30 minutes or longer depending on the lentils.

    Serves 6-8 people.

    LET ME JUST SAY. This soup was fantastic. I was unsure of what to expect, but I knew that it was going to taste great due to the ingredients. It took my a little over 2 hours to prepare and cook, but it was well worth it. It's very light, very flavorful and very delicious.

    This is a regular in my house. This meal is very easy to prepare, and no baking is required. This is what I make when I am in a hurry and need something filling and healthy. I make this meal once a week and live on the leftovers for a couple days after. I never get sick of eating this meal, because there is infinite room for variation.     Sure, lots of the meals I make are variations on meals that traditionally contain gluten. However, I also make many that just happen to be gluten-free. Here's one of my favorites.
    Grilled pork chops are an old stand-by. Cheap, easy to prepare, and delicious. I serve this version with steamed fresh broccoli and carrots, along with mashed white sweet potatoes. The result is a quick, delicious summertime meal that is easy on the budget and leaves plenty of calories for wine or a nice dessert.
    Ingredients:
    3-4 Pork chops
    12-16 broccoli or broccoli spears (3-4 per chop)
    3-4 white sweet potatoes (cubed)
    ¼ cup butter
    Splash of milk
    Splash of Balsamic vinegar
    Directions:
    Place pork chops on a hot grill (475-500 degrees)
    After 1 minute or so, rotate chop 90-degrees....

    This is doubtless the best time of year to buy corned beef. In anticipation for Saint Patty’s festivities, it’s almost always on sale. Corned beef generally comes with a packet of cooking spices and while I’ve seen a lot of recipes omit them, a good supermarket will send you home with decent spices worth using. Give them a once-over to make sure they’re gluten-free. This version has an added kick from the beer, so definitely go gluten-free there.  However, whether you’re Irish or not, classic corned beef and cabbage simply tastes like home.

    Perfect Holiday Mashed Potatoes (Gluten-Free)

    This is the simplest, easiest recipe for excellent mashed potatoes, for the holidays or any time.
    Ingredients:
    3 pounds Yukon gold potatoes
    2 teaspoons salt, divided
    ⅓ cup butter
    ⅓ cup cream
    2-3 ounces Greek-style yogurt
    ½ teaspoon coarsely ground pepper
    Directions:
    Peel potatoes, and cut into 1-inch pieces. Bring potatoes, 1 tsp. salt, and cold water to cover to a boil in a large pot over medium-high heat.
    Reduce heat to medium-low, and cook 15 to 20 minutes until fork-tender; drain.
