Gluten Challenge - Could Wheat Not Be The Culprit?

Question, I've been gluten-free for more than 8 months.

I recently started my gluten challenge to be tested for celiac disease, and other than some mild fatigue (at the start of the challenge) becoming slightly off balance, and a small rash, I've only had mild digestive issues (not the severe ones I usually am plagued with). I expected to get the diarrhea within a day of eating wheat. But, so far, nothing major has happened.

I've eaten, what I consider, a large amount. Does this mean that wheat isn't the culprit?

Sounds like you are just starting to get symptoms. It can take a while to make enough antibodies and for them to do enough damage to show up.

Congrats! Can you share the recipe? We just picked up a bread maker from an estate sale and are experimenting.
