Please Share Your Best Thanksgiving Cornbread

I've been making cornbread for many years, but the few times I've attempted dressing/stuffing, it's been a tasteless failure.

Please share your favorite recipe. And do you put this dressing/stuffing IN the bird to cook?

This is the recipe that I make, it is a modification of this one:

This is sooo good, people don't even know the difference.

* 4 shallots, minced

* 2 onions, diced

* 5 celery ribs, diced

* 5 carrots, diced

* 2-3 TB butter (I use soybean butter)

* 2 tbl dry sage

* 2 tbl dry thyme

* 2 tbl dry summer savory

* dash of pepper

* 1 cup white wine

* 1 loaf gluten-free bread, cubed (I use Kinnikinnick Italien white tapico, thawed)

* 1 cup gluten-free chicken stock (I use 1 cup of Imagine chicken broth, or 2

cubes of McCormick chicken bouillon and 1 cup of water).

Sauté the vegetables in the butter until they are soft, and the onions begin to carmelize. Add the seasonings and cook over medium heat for 2 minutes. Add the white wine, and continue cooking over medium heat until the liquid is reduced by half.

In a large bowl, mix the sautéed vegetables with the bread cubes, chicken stock, and parsley. Transfer to a baking dish and bake for 20 minutes at 325° F.

Variations:

Add finely diced sausage or bacon bits to the sauté, or toss in diced chestnuts, apples, or raisins. For cornbread stuffing, try adding dried cranberries or toasted pecans.

Thanks :) This recipe is very tasty and you can modify it and it still tastes good.

And do you put this dressing/stuffing IN the bird to cook?
I don't put it in the turkey, but I am sure it would taste fine if it was. I just make it in a big casserole dish. I make enough so that I can have leftovers and eat turkey dinners for a few days :D

Thanks so much for the recipe! This will be my first Thanksgiving with celiac disease (diagnosed that is) and I was really going to miss the stuffing. Now I won't! Thank you!

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
