Need Recipe: 1st Bday Cake

Hi all, I am totally new to this. My baby daughter has been diagnosed with food allergies and is on a no egg, wheat, soy, nuts, seeds, dairy diet. Plus since she is not 1 yet, we aren't sure if she can eat many of the other alternative foods yet. We are having a big 1st birthday party for her, which we planned before knowing about the allergies. I really need help with ideas for a cake. It doesn't have to be fancy, can do with out icing and all, but I would really like to have something for her to cut, even a fruit tart or the like.

And to make matters worse, I am not a baker or creative in the kitchen. I would appreciate any help at all that you could give.

Your dd has the same allergies that my dd does but we're gluten free as well as wheat free. :)

I have had good sucess with The Gluten Free Pantry's, Old Fashioned Cake and Cookie Mix. They have a downloadable cookbook for egg free & for dairy free recipes. Here's a link to there website.

1 Bag of Old Fashioned Cake & Cookie Mix

To the mix I add the following:

3 Tbsp. Applesauce

1/3 Cup Oil

1/2 Cup gluten-free Rice Milk or Water

2 tsp. gluten-free Vanilla

Mix all ingredients and bake according to the package.

(I use organic, no sugar added applesauce. I've also used pureed carrots and I've used Apricot Fruit Spread. The cookbook gives the suggestion of using combination fruit applesauces to change the flavor, such as apple/blackberry etc.)

(For the oil, I use canola.)

(A couple of times I didn't have any vanilla and it turned out fine.)

I've done the recipe for cupcakes, half dome cakes and 9" cakes. Let me know if you want any ideas for icing, if you decided to use it. You might use an 100% fruit spread such as Crofter's or Bionature to spread on the top. :)

I've made this cake twice. The first time, I used Bette Hagman's featherlight mixture. It was good, but I felt it was just a tiny bit "gritty" in texture. The next time, I used Carol Fenster's sorghum/corn flour blend and it was fabulous! Couldn't tell it was gluten-free at all. (I got the recipe from the internet, I have no idea who came up with it originally, although I do have a non-gluten-free version that is just a bit different.)

Gluten Free Wacky Cake

1 1/2 cups gluten-free flour mix

1 1/2 tsp xanthan gum

1 cup sugar

3 tbsp cocoa

1 tsp baking soda

1/2 tsp salt

1 tsp vanilla

1 tbsp vinegar

6 tbsp oil (I used canola)

1 cup cold water

Preheat oven to 350F.

In a large mixing bowl, combine flour, sugar, cocoa, soda and salt.

Make three "wells" in the flour mixture. In the first well, put vanilla, in the second the vinegar, and in the third the oil.

Pour the cold water over the mixture and stir until moistened.

Pour into an 8x8 pan.

Bake at 350 until it springs back when touched lightly...about 30 min.

I also added about 1/4 cup applesauce for added moistness.

Carol Fenster's Sorghum Corn flour Blend

makes 4 1/2 cups

1 1/2 cups sorghum flour

1 1/2 cups potato starch OR corn starch

1 cup tapioca starch (flour)

1/2 cup corn flour

Please be aware that tapioca starch and tapioca flour are the same thing, but potato starch and potato flour are completely different.

Good luck! I think this recipe should work with all the allergies/intolerances in your house.

Oh...I don't know. I didn't even think about that. She hasn't been tested.

I was just going to say if she COULD have chocolate, that it's fairly easy to make a gluten-free brownie cake without the wheat or egg or soy...

you can substitute rice flour or tapioca flour for the wheat flour in most recipes involving chocolate, pure cocoa and instead of egg, applesauce is a fairly good substitute... If you want I'll see if I can find a specific recipe for that.

Without the chocolate, you may have to get more creative, but I'm sure it can be done... maybe use grated carrots in the mix and applesauce, tapioca flour, stuff like that...

Thank you so much. I looked at there website and looked up this mix. The baking instructions say to use egg etc. Which I can't. So I am going to try your recipe as you suggested above. I just place an order for several packages. I assume I'll bake one or two before the birtday just to make sure they work....I'll need the practice :) . SHould I then just bake at temperaute they suggest and the length they suggest.?

I'd love to get some ideas on icing. She can't have berries yet so blueberry, strawberry spread etc. are out. I was thinking on making a sugar, cinamon, frosting and just drizling it on. but would love to get any other suggestion you may have.

Also, you wouldn't by chance happen to have a oatmeal raisin cookie recipe? I have a really good recipe they requires little sugar, but needs lots of eggs, and since I am new to this, I don't know how to make it without eggs.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.       Hi, @Ginger38, I've had shingles in the past.  I understand how miserable you're feeling.   Not only do i have the chickenpox virus lurking about, I also have the cold sore virus that occasionally flares with a huge cold sore on my lip when stressed or exposed to gluten.  The virus lives dormant in the nerves on the left side of my face.  It causes Bell's Palsy (resulting in drooling).  The cold sore virus is also in my eye.  My eye swells up and my vision is diminished permanently whenever I have a flare, so it's of the utmost importance to keep flares away and treat them immediately if they do happen so I don't lose any more vision.   I take the amino acid supplement L-Lysine.  Lysine messes with the replication of viruses, which helps the body fight them off.   I haven't had an outbreak for several years until this year when exceptionally stressed and contaminated, it flared up again. Lysine has been shown to be beneficial in suppression of viruses like the cold sore virus (a herpetic virus), the chickenpox virus (also a herpetic virus), as well as the HIV virus, and even the Covid virus.   I also take additional Thiamine in the form TTFD (tetrahydrofurfuryl disulfide) because Thiamine has antiviral properties as well.   For pain, a combination of Thiamine (like TTFD or Benfotiamine or Thiamine Hydrochloride), with B12 Cobalamine, and Pyridoxine B6 have been shown to have analgesic properties which relieve pain and neuropathy.    The combination of Thiamine B1, Pyridoxine B6 and Cobalamine B12 really does work to relieve pain.  I take it for back pain from crushed vertebrae in my back.  This combination also works on other pain and neuropathy.   I usually buy a supplement that combines all three and also Riboflavin B2 called EXPLUS online.  However, it's made in Japan and the price with the tariffs added makes it really expensive now.  But the combination of Thiamine B1, Pyridoxine B6 and B12 Cobalamine (and Riboflavin B2) still work even if taken separately.   I can't take Tylenol or ibuprofen because of stomach upsets.  But I can take the vitamin combination without side effects.  However, you can take the three vitamins at the same time as other pain relievers for added benefit.  The vitamins help other pain relievers work better. I hope you will try it.  Hopeful you'll feel better quickly.       I think, after reading this, that you areso traumatized by not being able yo understand what your medical advisors have been  what medical conditions are that you would like to find a group of people who also feel traumatized who would agree with you and also support you. You are on a crusade much as the way the US Cabinet  official, the Health Director of our nation is in trying to change what he considers outdated and incorrect health advisories. He does not have the education, background or experience to be in the position he occupies and is not making beneficial decisions. That man suffered a terrible trauma early in his life when his father was assonated. We see now how he developed and worked himself into a powerful position.  Unless you are willing to take some advice or  are willing to use a few of the known methods of starting on a path to better health then not many of us on this Celiac Forum will be able to join you in a continuing series of complaints about medical advisors.    I am almost 90 years old. I am strictly gluten free. I use 2 herbs to help me stay as clear minded as possible. You are not wrong in complaining about medical practitioners. You might be more effective with a clearer mind, less anger and a more comfortable life if you would just try some of the suggestions offered by our fellow celiac volunteers.

      Thus has got to STOP , medical bit believing us! I literally went through 31 years thinking it was just a food allergy as its downplayed by medical if THEY weren't the ones who diagnosed us! Im positive for HLA-DQ2 which is first celiac patient per Iran and Turkey. Here in the States especially in Cali its why do you feel that way? Why do you think your celiac? Your not eating gluten so its something else.Medical caused me depression. I thought I was safe with my former pcp for 25 years considering i thought everything I went through and going through will be available when I get fired again for health. Health not write-ups my health always come back when you're better.Im not and being tossed away at no fault to my own other than shitty genes.I was denied disability because person said he didn't know how to classify me! I said Im celiac, i have ibs, hernia, sciatica, high blood pressure, in constant pain have skin and eye issues and menopause intensified everything. With that my celiac nightmare began to reprove my disregarded disease to a bunch of clowns who think they are my careteam when they said I didn't have...I feel Im still breathing so I can fight this so no body else has to deal with this nightmare. Starting over with " new care team" and waisting more time on why I think I am when diagnosed in 1994 before food eliminated from my diet. P.s everything i went through I did write to medical board, so pretty sure I will continue to have a hard time.
