I, too, was diagnosed in 1980. I was lucky that my mother cooked everything for me from scratch. I also feel lucky that I can have potatoes. I'm sorry for this extra limitation!- additives

I was diagnosed with Celiac disease in 1980. There were no gluten-free products nor was there informed guidance. Since then, many, many companies now make gluten-free food. However, I have always become very, very sick when eating one of the main ingredients in the majority of gluten-free foods - POTATO STARCH. If you are lucky enough to be diagnosed young and if you stick to a strict gluten free diet, most people will not need to heed these pieces of advice. Being strict with a gluten free diet is the most important thing. I've heard way too many people say, "It only upsets me a little", or, "I can get away with a taste".- additives
