Getting used to eating gluten free

How long did it take everyone to get used to eating Gluten Free food? I am on my 9th month and I am still struggling with being upset with not being able to eat what others in my family eat. I just want to cheat so bad and in all honesty I do sometimes when I think I can't deal with it anymore! The Gluten Free bread I have tried (all of them so far) I cannot stand eating! To me it tastes like cardboard and sawdust. The same with Gluten Free snacks! I am trying all kinds but at the same time I am on food stamps and only get 16.00 a month! I am on disability for other reasons so i have VERY limited income. Please let me know if I am just being stubborn or if others have gone through this also! I suffer every day :(

Took me about 2 years to stop thinking about cheating, a bad gluten exposure in 2016 with a so called gluten free meal at a restaurant royally messed me up. I have not eaten food prepared by anyone else or eaten at a non dedicated restaurant since then.

The general rule on the bread....give up all forms for a year, then you just accept the Gluten free ones you can find and you forget the old taste for the most part. I also can not eat carbs (since the 2016 issues my pancreas does not work right) so I started with Julian Bakery bread back then, then started making my own, I even gave those up later on and just do not bother with breads as much with meals (aside from a bun I can make in the microwave). I learned how to make my own desserts after being tired of the nasty stuff in the stores (back then fewer options locally) so I perfected my own recipes gluten free, and later paleo and low carb for cookies, cakes, sweet breads, muffins etc. For years I was making decent money selling at farmer markets with baked goods, and later I did tent set ups and cooked and served meals all gluten free/paleo, til the whole covid and some recent issues with my vehicle. I am on RSDI myself so limited income and all my jobs are under the table income to make it possible to pay bills and live, honestly learning to make everything your self from scratch makes it much cheaper. Right now due to health and economic issues I am living on pretty much just eggs, and meats, sometimes eating baked goods that do not sale.

Thank you so much for this! I am So frustrated with myself trying to stay away from everything. I will do what you say. Good idea on giving up bread altogether. I might have to do that anyway! Great answer thank you agian!

      No, I've not been diagnosed as celiac.  Despite Entero Labs being relocated to Switzerland/Greece, I'll be doing another test. After eating wheat products in Greece for 4 weeks, there wasn't any reaction.  However, avoiding it here in the states.   Thanks everyone for your responses.

      Thank you @JulieRe so much for sharing this extra information. I'm so glad to hear you're feeling better and I hope it keeps moving in that direction. I feel I'm having so many lightbulb moments on this forum just interacting with others who have this condition. I also was diagnosed with gastric reflux maybe about 10 years ago. I was prescribed ranitidine for it several years back, which was working to reduce my gastric reflux symptoms but then the FDA took ranitidine off the shelves so I stopped taking it. I had a lot of ups and downs healthwise in and around that time (I suddenly gained 20 pounds, blood pressure went up, depression got worse, and I was diagnosed with OSA). At the time I attributed my change in symptoms to me taking on a new stressful job and didn't think much else about it. They did give me a replacement gastric reflux drug since ranitidine was off the shelves, but when I went on the CPAP for my OSA, the CPAP seemed to correct the gastric reflux problem so I haven't been on any gastric reflux drug treatment for years although I still do have to use a CPAP for my OSA. Anyway that's a long story but just to say… I always feel like I've had a sensitive stomach and had migraines my whole life (which I'm now attributing to having celiac and not knowing it) but I feel my health took a turn for much worse around 2019-2020 (and this decline started before I caught covid for the first time). So I am now wondering based on what you said, if that ranitidine i took could have contributed to the yeast overgrowth, and that the problem has just been worsening ever since. I have distinctly felt that I am dealing with something more than just stress and battling a more fundamental disease process here. I've basically been in and out of different doctor specialties for the past 5 years trying to figure out what's wrong with me. Finally being diagnosed with celiac one year ago, I thought I finally had THE answer but now as I'm still sick, I think it's one of a few answers and that maybe yeast overgrowth is another answer. For me as well, my vitamin deficiencies have persisted even after I went gluten-free (and my TTG antibody levels came down to measurably below the detectable limit on my last blood test). So this issue of not absorbing vitamins well is also something our cases have in common. I'm now working with a nutritionist and taking lots of vitamins and supplements to try and remedy that issue. I hope that you continue to see improvements in working with your naturopath on this. Keep us posted!

      Hello everyone. I am Elena and am 38 years old. I suspect I have a gluten intolerance even if my celiac panel is ok. I have the following symptoms : facial flushing, Red dots not bumps în face, bloating abdominal distension, hair loss, depression anxiety even with meds and even bipolar. Fatigue extreme to the point of not being able to work. All of these after I eat gluten. Could I have non celiac gluten sensitivity? Thanks anyone else with these symptoms?

      Hi Everyone,  I do appreciate your replies to my original post.   Here is where I am now in this journey.  I am currently seeing a Naturopath.  One thing I did not post before is that I take Esomeprazole for GERD.  My Naturopath believes that the decrease in the gastric acid has allowed the yeast to grow.    She has put me on some digestive enzymes.  She also put me on Zinc, Selenium, B 12, as she felt that I was not absorbing my vitamins. I am about 5 weeks into this treatment, and I am feeling better. I did not have any trouble taking the Fluconazole.

      I'm sure it's chemically perfect. Most of them taste lousy!
