I've not seen specific studies on this, however, there have been many stories posted by celiacs on this forum who ended up in the emergency room and were dehydrated and were low on electrolytes. My brother had this happen a few times. 

I would venture to say that it probably has a lot to do with how much villi damage you have, and the location of that damage, which can vary greatly from person to person.

I was told I need to drink more water than my (formulated) amount requires. Additionally, I have had to use smart water or flyby electrolyte drops to ensure I stay hydrated. My gluten challenge was in 2016, but I still struggle with hydration/electrolytes.
