Recipes For Leftover Turkey

I cooked a 14lb turkey today, does anyone have any recipes for leftovers..dairyfree too or something I can use rice milk..oh ya, not spicy either lol

I make turkey soup, just like chicken but with turkey. Turkey salad with mayo, celery, onions, and black olives. Turkey pot pies. Boil the carcas for the best broth ever (make sure to use sparingly by watering it down when you use it later) and freeze. Works great for rice. I love fixing turkeys. We eat for days. I have some turkey soup that I am going to bring out of the freezer tomorrow for a great, snowy day dinner. You can shred the turkey and make shredded turkey BBQ (I usually use chicken). Freeze leftover turkey for use later.

You could cream some turkey by using a normal creamed turkey recipe (like in Joy of Cooking) and subbing cornstarch for the flour and rice milk for milk. Saute with onions and garlic and mushrooms, yum! Never tried it that way, but I don't see why it wouldn't work. I'd post the recipe, but I don't have my cookbook handy.

From there, you can do all kinds of things! You could make turkey tetrazzini, pot pie, turkey a la king, or just creamed turkey over gluten-free biscuits (or even just bread!)! That's what I tend to do with my leftover poultry. And talk about your comfort foods...yum!

I'll see if I can find the recipes for them later, if you want...

ADD: I just thought of this, but since rice milk doesn't have the creaminess of dairy, you can supplement some of the liquid for creaming with chicken broth or boullion, and it will make the flavor richer.

Again, a great Bette Hagman one and it's perfect for leftovers. I make this weekly now, and just throw in the ingredients so they may not be an exact measurement - but if you like more of one ingredient use more, or less if you prefer:

Leftover chicken or turkey, chopped or shredded (I use about 1 chicken breast)

cooked wild rice (I use a wild rice blend and start with 3/4 c uncooked then cook according to directions)

1/3 c frozen baby peas

chopped celery

sliced or slivered almonds

dried cranberries

stir together

dressing (I think you could use Itallian Dressing) - but I take some mayo, thin down with a splash or two of water and a dash of lemon juice - stir together then mix with salad.

I think it tastes better if you make it the day before, and this usually gives me enough for two lunches. If you'd like exact directions let me know and I can look up for them.

      In this case the beer is excellent, but for those who are super sensitive it is likely better to go the full gluten-free beer route. Lakefront Brewery (another sponsor!) has good gluten-free beer made without any gluten ingredients.

      Welcome to the forum, @catsrlife! Celiac disease can be diagnosed without committing to a full-blown "gluten challenge" if you get a skin biopsy done during an active outbreak of dermatitis herpetiformis, assuming that is what is causing the rash. There is no other known cause for dermatitis herpetiformis so it is definitive for celiac disease. You would need to find a dermatologist who is familiar with doing the biopsy correctly, however. The samples need to be taken next to the pustules, not on them . . . a mistake many dermatologists make when biopsying for dermatitis herpetiformis.

      You state in an earlier post that you don't have celiac disease. Here in this post you state you will "be doing another test". What will this test be looking for? What kind of celiac disease testing have you had done? If you have used a Entero Labs it sounds like you have had stool testing done for celiac disease which is not widely accepted as a valid celiac disease diagnostic testing method. Have you had blood antibody testing for celiac disease done and do you realize that for antibody testing to be valid you must have been eating generous amounts of gluten for a period of weeks/months?

      No, I've not been diagnosed as celiac.  Despite Entero Labs being relocated to Switzerland/Greece, I'll be doing another test. After eating wheat products in Greece for 4 weeks, there wasn't any reaction.  However, avoiding it here in the states.   Thanks everyone for your responses.
