Yikes!  So many gluten-free foods and flours are high in carbohydrates.  Looking for bread recipes  ( for bread machine) that don’t raise my husband’s blood sugars and/or require a lot of insulin to enjoy.  
So much to learn and so many changes to make.  All worth it to get my amazing man feeling better.

Yes, rice and tapioca flour tend to dominate gluten-free flours and processed ready-made mixes and snacks. One spinoff of that is you miss out on the nutritional additives of wheat flour so gluten-free flours are pretty barren from a nutritional standpoint.

Look for gluten-free flours that have a nut base to them like almond flour.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
