Bone broth

I got sick and need to do a really basic diet for a while. I usually make my own broth,  but my supply is really low. I can't eat a lot of what the co op I go to has. I've been looking on the internet to buy local,  but there just isn't anything.  Any advice will be appreciated.

Do you have celiac diesease or NCGS (Non Celiac Gluten Sensitivity)?

What is it in the commercial broth products or at the co op that doesn't agree with you?

Is your sickness from getting "glutened" or something else?

We need some more information in order to possibly help you.

Celiac,  and I get sick from most packaged food, preservatives, grain fed meats, dairy, all grains and eggs. I'm extremely limited to what I can eat, and on a broth and gelatin most meals. I eat organ meat and squash sometimes.  It's hard to keep a steady supply of broth. I look on the internet for local places,  but just can't find anything. I live in Washington

I'm not sure if there are local cattle ranchers near you, but at my local farmer's markets there are a couple of local ranches that sell organic, grass-fed beef. I suspect that I could arrange with them to buy bones for bone broth, but I've never tried to do that. Perhaps search for a local rancher that sells beef directly?

Another source for grass fed meat products might be a butcher who deals with those who raise grass-fed beef.

      Have you considered eating plenty of gluten from now until your capsule endoscopy? If you truly have celiac disease that would increase the chances of damage being seen.

      I just want to reinforce what Scott said and that is we have tended to think in these neat little black and white categories of it's either celiac or NCGS when in reality it may not be quite that neat. There's just a lot we don't know and the immune system is very complex. I often wonder if I had been gluten free as a child if I would have avoided developing celiac disease as an adult. I think there is also this misconception that if you have NCGS, gluten is not harmful, it just creates discomfort and inconvenience.

      Gotcha.  I'll give 100% gluten-free a whirl after my testing concludes.  I know the traditional endoscopy is the gold standard, but I've already had that done and it was normal, so my gastro wants to do a capsule endo to try to cover more surface area and see if she can see anything further than the traditional endo... If I do have Celiac, I just seem to be on the very early end, I think.
