Graham Cracker Success!

I posted about this several months ago. I had tried doing a gluten-free version of graham crackers using this recipe from Top Secret Recipes - Open Original Shared Link

They came out good, but overly sweet. I wasn't craving sweets at all, so I hadn't tried to tweak the recipe after that.

Well, we're going camping tomorrow (SMORES!!!!) and so I decided to try the recipe again, just cutting the sugar. And it's WONDERFUL!!!

Here's the recipe:

1/3 cup shortening

1/2 cup granulated sugar

3 tablespoons honey (warmed in the microwave for about 10-15 seconds)

1.5 teaspoons vanilla

3 cups Pamela's Ultimate Pancake and Baking Mix

1/2 cup water (I used a little less)

Preheat oven to 275 F.

Cream together shortening, honey and vanilla in a large bowl.

Add Pamela's Mix one cup at a time. I just cut it together with a fork. It ends up being kind of mealy looking, but just work it together until all three cups are incorporated.

Add water a little at a time. This will bring it together into a dough. Add just enough water to make a cookie dough consistency. I used all of the 1/2 cup except for a tablespoon or so.

To make the graham crackers I just roll the dough into walnut-sized balls. Place on a cookie sheet sprayed with cooking spray On a big cookie sheet, I put six. Then I used a flat-bottomed bowl, dipped it in sugar and flattened them. They are about 4 inch rounds.

Sounds like just about the perfect size for S'mores.

Bake them at 275 for about 20-25 minutes, or until golden brown and delicious.

Oooohh, that sounds good - I'm going to have to try this recipe. I'm excited that it has no eggs or milk! Another yummy way to make s'mores is to make "Cowboy S'mores". You take 2 gluten-free chocolate chip cookies (I always make homemade) and put the toasted marshmallow between them. Talk about delicious! We always take chocolate chip cookies camping with us so I can have s'mores too. Then you don't have to mess with separate chocolate and crackers.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
