I've been gluten free for a couple weeks. Started feeling better almost immediately. Introduced something new to my diet today. Had a Boomi Bar. Label says gluten free. Company has discontinued products that used to contain gluten, so no cross contamination.

My question is in regards to amaranth. There was puffed or crisped amaranth in the bar. This is supposed to be a safe grain. It's also probably the first time I've had it in my life. Anyone ever have a reaction to amaranth early in their healing process?

I've never had a problem with amaranth, though I certainly don't remember when I first had it. :-)

I've also never had issues with amaranth - it's my favourite grain and flour to use.

I haven't had any issues with amaranth...but early on in the diet...b/c of slow-going progress, it would sometimes appear I was having reactions to safe foods when in fact the GI distress was just a sign of the terrible state of my intestines. Amaranth is a higher fiber food...so starting out on the diet, foods higher in fiber may be harder for your system to process.

      Occasionally eating out in restaurants means that there is potential cross contamination in spite of ordering a gluten free dish. What enzyme supplements can the forum recommend that would help with potential cross contamination? Something I could take before I start eating. I used to order Wheat Rescue from Microbiome lab, but it is not available anymore.

      Hi  - Anyone have any experience with these? I bought them at Costco thinking they must be gluten-free, but now I see Natural Flavors and Spice in the ingredients. There's no Gluten Free labeling. However the Costco site and two other sites say it's gluten free. Anyone know?

      Yes, I doubt you can find a perfectly safe restaurant--perhaps a dedicated gluten-free restaurant, but in general, very few of them exist, and they tend to be in larger cities. Super sensitive celiacs should probably just avoid eating out.
