I am excited. Luke turns 4 Wednesday but we had his party today. His gluten-free chocolate tractor cake turned out awesome and he loved it. (I had give my MIL the special ingredients and recipe and she made Betsy's chocolate cake and also cupcakes) There are only 5 cupcakes left of the 24 and we also had the frosted cake so I know they liked it and weren't just being polite. (Only had 12 people there) We had turkey, corn, applesauce jello and then cake and ice cream.

Anyway, just thought I would share that something went right the first time around for a change. The cake was very rich tasting and moist and yummy. No one complained about missing the gluten :) It just feels great to be able to do something "normal" for my son. :) Kendra

Hooray for your fabulous mother-in-law! How nice that Luke's party turned out to be such a success. The guests likely didn't even realize that the cake wasn't what they would normally get. A tractor cake.......how special. I used to make neat cakes like that for my kids (bunny, tiger, train, type-writer, piano......), and they're so appreciative when you make something neat like that. And when their friends are admiring that awsome cake, and it tastes good too, they're so happy.

I am sure you're breathing a sigh of relief at this milestone. If you can handle a gluten-free birthday party without any upsets, you can handle anything. :D

That's great!! I'm so happy for you and for Luke. I remember feeling really great when we had our first birthday success. My oldest will turn 4 this January and we'll be doing it again. She wants a Hello Kitty cake this year. i'm excited to make one for her.

Hi, what cake recipe did you use? I have used a chocolate cake mix from the Gluten Fee Pantry which is good but tends to turn out dry sometimes, kind of like the consistency of a devil dog. I also have a good receipe for a yellow cake but none for chocolate.

This is a quote from gluten-free Betsy in the Baking and Cooking section of this forum. The eating gluten free website listed at the bottom of the recipe has some other good recipes on it. The 3 I tried so far were all good. Thanks Betsy!!!!!

This is a great chocolate cake. No one can ever tell it's gluten-free. The gluten-free mix called for is Bette Hagman's mix (6c. rice, 2 c. potato starch, 1 c. tapioca starch)

Gluten Free Chocolate Cake with Cream Cheese Frosting

1 3/4 c. gluten-free flour

1/2 tsp. xanthan gum

2 c. sugar

3/4 c. cocoa

1 1/2 tsp. baking soda

1 1/2 tsp. baking powder

1 tsp. salt

2 eggs

1 c. sour cream

1/2 c. oil

2 tsp vanilla

1 c. boiling water

Frosting

8 oz. cream cheese

1/2 c. margarine

1 lb. powdered sugar

1 tsp. vanilla

Preheat oven to 350 degrees. Combine dry ingredients in a medium bowl. Beat eggs well. Add milk, oil, and vanilla. Beat in dry ingredients. Slowly add boiling water, and mix well. Batter will be extremely thin. Pour into a greased pan. Bake a 9x13 pan for 35-40 min. Bake a 13x18 pan for 17-20 minutes.

Frosting: Cream together cream cheese and margarine. Beat in powdered sugar. Add vanilla.

I use brown rice flour instead of white rice when I make Bette Hagman's gluten-free Mix. We used normal cake frosting for the tractor cake but the cream cheese stuff sounds good. This recipe makes 24 cupcakes if you want to go that route. Instead of frosting them we put some chocolate chips on each one and they are wonderful! :) Kendra

yeah!!! we are doing a birthday party this saturday for samantha. samantha does not have celiac, but since we almost exclusively bake gluten free, we will probably be making gluten free cupcakes. hope our party is as successful as yours.

Congratulations on your sucessful party! I'm glad the cake was a hit, but mostly I'm glad you've got a successful "occasion" under your belt. Having a party go with a bang like that makes you realize that you can go gluten-free and enjoy it! Way to go!

Today was Luke's 4th birthday so I made more cupcakes and took them to Caravan at church tonight. I put peanut butter chips on top this time instead of frosting. The leaders said all of the kids gobbled them up--didn't suspect they were made with different flour. :) Kendra

      Hello, @Jane02,  I take Naturewise D 3.  It contains olive oil.   Some Vitamin D supplements, like D Drops, are made with fractionated coconut oil which can cause digestive upsets.  Fractionated coconut oil is not the same as coconut oil used for cooking.  Fractionated coconut oil has been treated for longer shelf life, so it won't go bad in the jar, and thus may be irritating to the digestive system. I avoid supplements made with soy because many people with Celiac Disease also react to soy.  Mixed tocopherols, an ingredient in Thornes Vitamin D, may be sourced from soy oil.  Kirkland's has soy on its ingredient list. I avoid things that might contain or be exposed to crustaceans, like Metagenics says on its label.  I have a crustacean/shellfish/fish allergy.  I like Life Extension Bioactive Complete B Complex.  I take additional Thiamine B 1 in the form Benfotiamine which helps the intestines heal, Life Extension MegaBenfotiamine. Thiamine is needed to activate Vitamin D.   Low thiamine can make one feel like they are getting glutened after a meal containing lots of simple carbohydrates like white rice, or processed gluten free foods like cookies and pasta.   It's rare to have a single vitamin deficiency.  The water soluble B Complex vitamins should be supplemented together with additional Thiamine in the form Benfotiamine and Thiamine TTFD (tetrahydrofurfuryl disulfide) to correct subclinical deficiencies that don't show up on blood tests.  These are subclinical deficiencies within organs and tissues.  Blood is a transportation system.  The body will deplete tissues and organs in order to keep a supply of thiamine in the bloodstream going to the brain and heart.   If you're low in Vitamin D, you may well be low in other fat soluble vitamins like Vitamin A and Vitamin K. Have you seen a dietician?

      I do not know this, but since they are labelled gluten-free, and are not really a product that could easily be contaminated when making them (there would be not flour in the air of such a facility, for example), I don't really see contamination as something to be concerned about for this type of product.

      Thanks @Scott Adams. Do you know if Kirkland Signature supplements share facility and production lines with other products containing gluten?  I'm worried that I'll react to this brand just like I did with other gluten-free labelled supplement brands.
