Zesty Bacon Potatos

This would make a great side dish for Thanksgiving dinner. It's relatively easy to make and it only takes about 30 minutes of cooking time (20 of those are just boiling the potatos).

Ingredients:

5 large potatos (I used baking potatos), peeled and diced into 1" pieces

5-10 strips of cooked bacon, crumble(I like a lot of bacon, you may prefer less)

1/3 cup finely diced onion

1/3 cup Kraft ranch dressing (may need a little more, add to taste)

Black pepper to taste

3 Tbsp butter or margarine

1 Tbsp oil

1/4 sliced mushrooms (canned or fresh)

Directions:

Boil potatos until soft

Add onion, butter, oil and mushrooms to saucepan and cook on medium heat, uncovered until onions are translucent

Add potatos and black pepper and stir gently so the potatos maintain their cube shape, cook 5-6 minutes

Add ranch dressing and bacon, stir gently until thoroughly combined and hot throughout

There should be no remaining liquid in the bottom of the pan from the butter or oil, potatos should be moist, not dry

Serve hot.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
