I Hate To Cook/clean Up

Usually It is just me that I'm making dinner for. I have been living on Purdue ShortCuts, Success rice (cooks in bags in 10 minutes) and a a package of frozen veggies. I sprinkle a little bit of garlic salt on it. That gives me dinner, and lunch for the next day. It's quick and easy to clean up, but I'm getting really bored.

Does anyone have any suggestions? I really don't want to spend any more time in the kitchen than I have to.

Water and boullion (or broth), rice noodles, frozen shrimp, and frozen veggies (all heated long enough to get everything hot and the noodles cooked) makes for a very quick, one pot soup - chili oil adds a touch of spicy flavor, but the key ingredient here that will make or break the soup is the boullion or broth.

Tuna, made with avocado if you can't have dairy and don't like mayo ;), with chopped tomato, red onion, and wrapped in lettuce leaves. Add an apple for dessert for this light meal.

Chili is actually *very* fast, as far as time in the kitchen - you just have to brown the meat, then add in a can or two of beans, a can or two of tomatoes, and spices (I use cumin, chili powder, and cayanne). If you're feeling fancy, you can dice half an onion. The prep time is about 10 minutes (from opening the fridge to putting the lid on), then you let it sit on low for 20-30 minutes while you don't need to be anywhere near the kitchen (check once or twice to make sure it's not burning), and it's good. Another one-pot wash-up.

Grilled meat and grilled veggies are also quick, and require washing no dishes but the plates you eat on. (A grill is really a good way to reduce cleaning.)

Roasting a chicken in the oven may take 2 hours or so of cook time, but if you get a probe thermometer, all you need to spend in the kitchen is about 15 to get the chicken in the pot, throw some spices on it, chop an onion into big chunks, same with a few carrots (and may some other veggies too), toss in some baby potatoes, put the probe thermometer in and set the temperature, and stick it in the oven. Just one pan to wash.

Making a big pot of rice one day, and using the leftovers for lots of things helps. Fried rice (even just what is essentially scrambled eggs, brown rice, and soy sauce) makes a great quick meal that only takes one pot if you have leftover rice.

My current quick and easy is Lundberg Farms Risotto ( kinda like rice a roni without the pasta) and then I add frozen veggies and frozen shrimp when I add the water. Depending on the variety I'll either wrap it in a corn Tortilla or just eat it by itself. Not sure what your other intolerances are ( some of the rice mixes have dairy) but it sure adds variety to the whole rice and veggies thing and makes dinner and lunch in one box. ( I do have small portion sizes though, I don't eat much at one sitting.

      Yes, some people do get withdrawal from gluten but gluten withdrawal doesn't usually cause gut pain. Maybe more like general body aches and discomfort. We have articles on gluten withdrawal on this forum. You might do a search for them. Applesauce is very acidic and some brands have added vitamin C (ascorbic acid) which makes them more acidic. This can damage the stomach lining if you eat it too often. Especially if your stomach lining is already compromised. Ibuprofen inhibits the body's ability to rebuild the stomach's protective mucosal lining. That's why it can cause peptic ulcers. As strange as it may sound, low level irritation/inflammation stimulates the body to rebuild the stomach lining. There are two steps in this rebuilding process known as COX 1 and COX 2. Ibuprofen represses both COX 1 and COX 2. Celecoxcib, a prescription anti inflammatory, inhibits only COX 2, making it less likely to cause damage to the gut lining.

      Do you or anyone know alot about ibuprofen  I wasn't sure if I was eating too much apple sauce.   Something is making my pain so much worse  I'm referring to the intense pins and needles in my feet and lower legs.  Jaw actually has tardive dystonia and muscle spasms throughout my back Almost like an opposite effect that a pain reliever would do. I'm fairly new to this. Whatever is going on seems to be worsening  Do people get a withdrawal effect from gluten?  It's extremely painful 😖  I'll post that question or research on the site  Thank you everyone for responding

      I think I found a huge culprit for severe reactions to create worsening of my c symptoms. Do people with celiac have sensitivity and /or have opposite reaction to certain medications Where can I find a list ?  I'm new here I'm.wondering why I am getting worse when I take certain medicine...the burning feet.  Rebound muscle pain so intense  How many people get opposite effects or have a horrible attack after these meds

      Does anyone know if that includes scrambled eggs and healthy smart butter (,gluten free) I add a very tiny amount of margarine less than a teaspoon.  I did no't have any bread    It just seems like no matter what I eat my stomach and nerves over fire and here comes a host of horrible symptoms. My lower abdomen feels horrible, my right leg thigh muscle.. very odd. Jaw pain. Burning feet , joint pain , you name it  The anxiety just creeps up into brain fog. I don't think I could explain this to anyone who is unfamiliar.  Also,  I most likely will not remember posting this until I check it.  This is highly unusual for me because I have an excellent memory.  One weekend before I knew anything about celiac I lost an entire weekend from severe brain fog, confusion, pain, etc.  I honestly thought I was losing my mind. When I think back I recall eating a lot of PBJ sandwiches and turkey sandwiches.  Once again did not know about gluten.  I was just too sick to cook. Do people fast during attacks ?? It seems horrible to keep going through this. I hope I'm not causing my own problems... I wonder if I should fast because I'm not eating gluten .  Chicken ,  scrambled eggs no milk , canned carrots,  gluten free low sugar low fat Greek yogurt which I already posted about 😞 Any suggestions I am open... I am bedridden when this happens to me.  Thank you Celiac community. 🙏🏻❤️
