I tried to make pop tarts, but it did not turn out at all!!! I dont understand the gluten-free dough wont roll and it sticks to everything! Anyone know how to make good and easy pop tarts?

I use the Gluten Free Pantry's perfect pie crust mix and while they aren't EXACTLY like pop tarts they are close enough to satisfy the craving. (I use parchment paper and rice flour for rolling) and I use jelly for filling, I make a glaze with powdered sugar, vanilla and milk

I use the pop tart recipe from this website in the listed recipes. Kids loved them. I used different jellies (dickinson brand with no sugar) & then I did some with brown sugar & cinnamon. If you can't find the recipe please pm me & I'll get it to you.

Anything that has a high protein content should work well. You could try fava bean flour, garbanzo bean flour, soy flour, or sorghum flour. I think that out of those sorghum and fava bean flours taste the best. Sorghum tends to turn light colored baked goods brown and has less protein than fava bean flour. :)

Bob's Red Mill makes the garfava flour.

thanks for those tips. Anyone know any good substitutes for almond or flax meal?

      Thank you this really helped.

Okay that is really good to know. So with that being positive and the other being high it makes sense she diagnosed her even without the endoscopy. So glad we caught it early. She had so many symptoms though that to me it was clear something was wrong.   yeah I think we had better test us and the other kids as well.

One doctor suggested it, but then seemed irritated when I asked follow-up questions. Oh well—

@GlorietaKaro, your respiratory reactions to gluten make me wonder if there might also be an allergic (anaphylaxis) component at work here.

Thanks to both of you for your responses!  Sadly, even after several years of very strict gluten avoidance, I remember the symptoms well enough that I am too frightened to risk a gluten challenge— heartbeat and breathing problems are scary— Scott, thank you for the specific information— I will call around in the new year to see if I can find anyone. In the meantime, I will carry on has I have been— it’s working! Thanks also for the validation— sometimes I just feel crushed by disbelief. Not enough to make me eat gluten though—
