I was diaganosed a while back with Celiac disease and the doctor told me I was also allergic to lactose and fructose. Here's the question...if I did away with the gluten in my diet but continue to use

lactose and fructose products,will the lactose and fructose do damage to my body?

lactose and fructose products,will the lactose and fructose do damage to my body?

I can only speak for myself; but I noticed that I am way more sensitive now to my food allergens

than when first tested and diagnosed for allergies - which was 20 years ago. I personally

stay away from it all and I have a lot of things that I am allergic to.

Way back when I first was diagnosed, my doctor suggested that I food challenge my

body to find out which items that I was really sensitive to other than the obvious reacting ones.

Trouble for me was - that symptons were different for different food food groups, ie: migraine headaches from

corn, hives from strawberries/shrimp, asthma from soy, etc. So it comes down to a personal choice - can your body handle a little? Also depends on how much damage there is from celiac disease as to whether your body can digest

the allergic proteins. Lots to consider.

I've read many places that lactose intolerance is often a result of celiac disease, but after eliminating gluten for a time the lactose intolerance may diminish. I also had that problem, but in my gluten testing I also got tested for casein sensitivity and found out I had that too, which means I should avoid dairy as much as gluten. If you eat dairy when you are casein sensitive, you can also damage your intestines. So it might be a good idea to get specifically tested for casein sensitivity. As for fructose, it's a HORRIBLE product that no one should eat, period.

Yes, we have been aware that this can be an issue with mushrooms but as long as they are rinsed thoroughly it should not be a problem since the mushrooms don't actually incorporate the gluten into their cellular structure. For the same reason, one needs to be careful when buying aged cheeses and products containing yeast because of the fact that they are sometimes cultured on gluten-containing substrate.

      The one kind of food I had been buying and eating without any worry for hidden gluten were unprocessed veggies. Well, yesterday I discovered yet another pitfall: cultivated mushrooms. I tried some new ones, Shimeji to be precise (used in many asian soup and rice dishes). Later, at home, I was taking a closer look at the product: the mushrooms were growing from a visible layer of shredded cereals that had not been removed. After a quick web research I learned that these mushrooms are commonly cultivated on a cereal-based medium like wheat bran. I hope that info his helpful to someone.

Incidentally, I don't like quinoa either. Reminds me and smells to me like wet grass seed. When its not washed before cooking it makes me ill because of saponins in the seed coat. Yes, it can be difficult to get much dietary calcium without dairy. But in many cases, it's not the amount of calcium in the diet that is the problem but the poor uptake of it. And too much calcium supplementation can interfere with the absorption of vitamins and minerals in general because it raises gut pH.
