Gluten-free Pantry Question

Superbowl Sunday, we're having Roast Beef Sandwiches...I have a pkg of gluten-free Pantry French Bread/Pizza Crust mix....wanted to make myself rolls...

IF I put corn meal down on the baking pan and "blob" it out in roll sized portions...let it rise and bake it...would it work???

Sorry, I'm just seeing this now.

Yes, you can do that--I have. Just watch them carefully for doneness--I think 15-25 minutes, depending on the size. :)

I'm late to chime in here, you've probably made them already... I make my G F Pantry rolls in muffin tins. They work great and I even serve them to company.

I have not made them yet. I'm actually waiting until tomorrow morning b/c I know that they are best when really fresh. Hoping to make mid morning.

I have muffin baking cups. The extra large size. I may just use that. I was trying to figure out how to get them shaped evenly without anything to use like a big ice cream scoop. If it works, I may just ahve to try that.

      I didn't ask a doctor about this actually. I did ask several doctors a long time ago and they told me gluten has nothing to do with hashimoto's. One of them told me to do a gluten challenge to test for celiac, but at the time I was in graduate school so couldn't afford to be even more ill than I was. If you have the symptoms, I really don't advise you to do a gluten challenge. It messed me up mentally and physically for months. At the same time, I benefitted from doing the challenge in the sense that it convinced me that all my symptoms were truly from gluten - even stuff like insomnia! So now I am terrified to eat gluten, whereas before I would have a little once in a while and not notice anything dramatic.

      I am in a similar situation where I can't feasibly do a gluten challenge but have all the symptoms and I have 2 celiac genes. I'm curious if your doctor advised you to eat as if you had a diagnosis or if they were more dismissive about it.

      Negative, although I had most of the symptoms of celiac disease. I now eat as if I had a diagnosis.
