Hey y'all! I was just wondering what everyone else eats on their gluten-free diet and as part of their lifestyle. I thought by sharing, we could gain better tips and advice from those doing it right, get some new ideas, or even realize where we are lacking ourselves in the nutrient department. Do y'all want to start this as a new post? ;)

I tend to eat 5-6 small mini meals a day because I have an 11 month old Im running after, and a very busy life. I feel ill any other way. I've also been a vegetarian since I was 7. I LOVE my gluten-free diet and feel so much better already.... Here is what I have planned for today:

* A big smoothie before leaving house- frozen strawberries, banana, a handful of baby spinach, and some cucumber slices (sounds gross, but want to make sure to eat my veggies) + ice/water

* A Cottage Cheese double for next mini meal (rasberry flavor)

* Some scrambled EggBeater (equivelant to 2 eggs) with mushrooms

* An Amy's frozen (veggie) Sheppard's Pie. Gluten-free ofcourse!

*A rice cake with peanut butter...

That's all for now. What about y'all? For exercise I teach a fitness class in the morning for an hour. Today is my easy day : )

Here's my plan for today:

Breakfast was: Turkey sausages and a supplement cocktail (some vitamin C crystals, a little modified citrus pectin, some detox drops, chlorella and a little stevia to taste, lol)

Mid morning snack: egg salad

Lunch: ground beef and broccoli

Dinner (actually early afternoon): NY steak, sauteed (in olive oil) brussells sprouts, another supplement cocktail or perhaps the same made into a smoothie

Evening snack: Turkey slices

Exercise: At lunch time: 20-25 minutes on the treadmill or exercise bike, and after work, a leg workout--this is also my easy day.

Fruity Pebbles for breakfast

Cheeseburger Macaroni & broc & cauliflower for lunch

Van's gluten-free flax waffle with coconut oil and a fried egg on top for breakfast.

Grilled chicken salad (grilled chicken, grapes, cashews with mayo) for lunch.

Dinner will be cleaning out the refrigerator because we are leaving for Florida Saturday, plus I don't feel good enough to cook today. I'll probably end up with Amy's enchiladas.

Evening snack will be kifir -- plain with a powdered lemon-flavor probiotic mixed in (VSL#3). I'll probably also eat a piece of Kinnikinnick yeast-free toast with coconut oil on it.

Today is a day off from exercise. I lift weights four days per week, but cannot do any cardio right now because of the Lyme Disease.

Hi I'm new! Third day going gluten free (really only the second because the first day i screwed up!).

Breakfast: Coffee and a Banana

Lunch: Burrito Bowl (Tortilla chips, brown rice, chicken, salsa, cheese, sour cream and lettuce)

Dinner: Salsa Chicken, Baked Potato Fuddruckers! Bunless Burger, fries.. But was served fries with an onion ring in the middle! This is why I'm going to fail with this diet... I have change of plans too much! I can't cook every night, i eat where ever I end up when i'm hungry.

Snacks: Rita's Italian Ice, Dried Mango and Pineapple Slices. none of those.. not needed :)

The snacks and dinner are still just planned... only got though lunch so far!

As for Exercise, I will probally go for a bike ride tonight. No exercise.. too busy!

The kids are on spring break right now, so our routine has gone out the window. I haven't really had any meals yet today (kids had cereal)...just pomegranate & berry juice and coffee so far. Will have to make lunch for the kids soon...will probably have pasta w/red sauce for lunch myself. :)

For exercise, I'll be going to an 1.5 hour hot yoga class tonight. I'll have to eat dinner 2-3 hours before the start of class.

Today I have already consumed two soft boiled eggs and a banana.

For lunch I have planned some yogurt and perhaps a bag of popcorn.

I have about a 6-8 mile run planned for today at lunch time. It's actually sunny here

for a change, so that will really pick up my energy. I didn't run yesterday, so I might end

up going 10 miles if my legs feel springy.

Tonight I think I'll make a Chicken/Veggie stir fry with gluten-free Teryaki Sauce.

Propel fitness water is my beverage of choice(I know sickening isn't it)

I have created a stash of my favorite ice cream for when my cravings get really bad.

Other snacks I have around are some gluten-free Cookies, that are mildly satisfying.

Couple different kinds of Corn Chips and potato chips...

Have fun at Disney! We won't make it there this trip. My dad lives in St. Pete, so we'll be staying there.

Im so frustrated and still getting the run around trying to reprove my celiac disease which my past primary ignored for 25 years.I understand that theres a ray of medical that doctors are limited too but not listening and telling the patient ( me) that im not as sensitive as I think and NOT celiac!Correction Mr white coat its not what I think but for cause and affect and past test that are not sticking in my medical records.I get sick violently with foods consumed, not eating the foods will show Im fabulous. After many blood draws and going through doctors I have the HLA- DQ2 positive which I read in a study that Iran conducted that the severity in celiac is in that gene.Im glutenfree and dealing with related issues which core issue of celiac isn't addressed. My skin, right eye, left leg diagestive issues affected. I have high blood pressure because im in pain.Im waisting my time on trying to reprove that Im celiac which is not a disease I want, but unfortunately have. It  has taken over my life personally and professionally. How do I stop getting medically gaslight and get the help needed to bounce back if I ever do bounce back to normal? I thought I was in good care with " celiac specialist " but in her eyes Im good.Im NOT.Sibo positive, IBS, Chronic Fatigue just to name a few and its all related to what I like to call a ghost disease ( celiac) since doctors don't seem to take it seriously.

@Martha Mitchell, your reaction to the lens implant with gluten sounds like it could be an allergic reaction rather than a celiac reaction. It is possible for a celiac to be also allergic to gluten as it is a protein component in wheat, barley and rye.

Scott I also have different symptoms than most people. It affects me bad. Stomach ache, headache, nauseous, heart racing, whole body shaking, can't walk then my throat starts to close. It attacks my nervous system. The only thing that saves me is a 1/2 of Xanax...it calms down my nervous system

Scott Adams. I was dealing with a DR that didn't care about me being celiac. I repeatedly told him that I was celiac and is everything gluten-free. He put an acrylic lens from j&j. I called the company to ask about gluten and was told yes that the acrylic they use has gluten....then they back tracked immediately and stopped talking to me. The Dr didn't care that I was having issues. It took me 6 months and a lot of sickness to get it removed.... which can only happen within 6 months. The Dr that took it out said that it was fused and that's why I lost vision. If they would have removed it right away everything would be fine. He put in a silicone one that was gluten-free and I've had no issues at all in the other eye. Do not do acrylic!
