I had been gluten free for 1 week. and not sick for 1 week. All of a sudden i am just as sick, even though i have not been eating anything with gluten in it. i read all labels.

Although I did drink soy milk today, with hershey's syrup in it I read the syrup was gluten free. Is soy milk gluten free????

or can I become sensitive to soy?

Honestly how serious is cross contamination? my grandma eats toast everymorning and leaves her scraps where ever she leaves her plate.

Cross contamination is an issue. a beadcrumb was enough to do my wife in, and her boss has a habit of leaving cake crumbs all over her computer desk which have gltuened her in the past. The crumbs could well do it.

I'm afraid I don't know about the soy, since I drink goats milk and take the pain!

Welcome! Some soy milks are gluten-free, some aren't. You have to check your brand. And yes, you can become intolerant to soy. Or maybe you were all along and the gluten symptoms were so much worse that you didn't notice the soy. And the crumbs could definitely make you sick.

But remember you've only been gluten-free for a week which is not very long. It's extremely common to have some ups and downs in the first few months due to CC or the natural healing of your body. So I wouldn't get too worried about other intolerances right now. I'd start to worry if you aren't better in a few months. It is probably a good idea to give up dairy while you're healing (it's the tips of the villi that digest lactose so you may have dairy problems until the villi are healed).

      Yes, if you are convinced gluten is causing you problems then it would seem to come down to NCGS but you may also have other intolerances.

      Ended up demanding HLA and I’m negative for both. So assuming this is NCGs now? PCP seems unsure and GI is referring to genetics which I don’t get.  about to lose my mind

      You are definitely not alone aftertastes and denser interiors are really common with gluten-free baking. Oat and tigernut flours are great choices, and tweaks like extra egg or adjusting hydration are exactly the kind of trial and error that usually leads to better texture over time.
