Gf Doughnuts

Well my wife and I sent our 3yr old gluten-free daughter off to pre-school and are finally ironing out all of the wrinkles with the snacks and birthday parties at school and now we have "Doughnuts with Dad's Day" coming up Oct. 15th. I have not tried to make gluten-free doughnuts before. Is there anybody out there that has a good recipe for gluten-free doughnuts that they would like to share? I have one for old fashion cake doughnuts, but I thought I would ask around and see if any one had a tride and true recipe.

You and your daughter have fun with "donuts with dad", my daughter had that too in K and then "muffins with mom", that was before we went gluten-free! :D

Okay,

This great recipe is from Bette Hagman's More From the Gluten-Free Gormet. pg89

1.5 cups gluten-free flour mix

2 tbsp soy four

1.5 tsp baking powder

0.5 tsp salt

1 tsp apple pie spice (I did not have so did not use)

1/3 cup suger (divided)

1 cup lukewarm water

1 tbsp rapid rise dry yeast granules

3 tbsp melted margarine

1 quart veg oil (I use olive because of its health benefits)

3-4 tbsp sugar for dusting

Blend all ingred from flour to pie spice. Set aside

Add 1 tsp of the sugar to the water and then add the yeast - set aside until slightly foamy.

Blend everything else together (except the oil of course!) and add the yeast water. Beat in the flour mixture ( a little at a time)

Heat oil to 370 degrees and deep fry until lightly browned.

This recipe is wonderful!!! I would highly recommend all of Bette Hagman's cook books for magnificent recipes that taste wonderful.

There are lots of 'em - muffin recipes. I like using the Arrowhead Mills general baking mix and the muffin recipe on the back (with blueberries), and the muffin recipe on the back of Bob's Red Mill Soy Flour as well. Muffins are probably the easiest gluten-free thing to make, I think. ;-)

      Hi, I posted before about my son's legs shaking after gluten. I did end up starting him on vit b and happily he actually started sleeping better and longer.  Back to my 4 year old. She had gone back to meltdowns, early wakes, and exhaustion. We tested everything again and her ferritin was lowish again (16) and vit d was low. After a couple weeks on supplements she is cheerful, sleeping better and looks better. The red rimmed eyes and dark circles are much better.   AND her Ttg was a 3!!!!!! So, we are crushing the gluten-free diet which is great. But WHY are her iron and vit d low if she's not getting any gluten????  She's on 30mg of iron per day and also a multivitamin and vit d supplement (per her dr). That helped her feel better quickly. But will she need supplements her whole life?? Or is there some other reason she's not absorbing iron? We eat very healthy with minimal processed food. Beef maybe 1x per week but plenty of other protein including eggs daily.  She also says her tummy hurts every single morning. That was before the iron (do not likely a side effect). Is that common with celiac?

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.
