Hi all,

This will be my third trip to Tucson but the first time with as a celiac. We love Parrilla de Suiza (might not be spelling that correct) I know they have delicious corn tortillas but I wonder if anyone else has spoken to them. Our room has a kitchen so I'll go to Trader Joe's and Sunflower for goodies but I would like to go to this place.

Also, can you tell me of any farmers market open at the end of May?

Thanks,

Monica

I think there are some gluten-free pizza places in Arizona, too, Monica.

Picazzo's Pizza has a HUGE gluten free menu and it is TOO DIE FOR! But they are only in Scottsdale, Tempe, Sedona and Flagstaff. I miss Pizazzo's. I am almost willing to buy an airline ticket just to got buy me a Pizza

Monica,

It's La Parilla Suiza...we haven't eaten there, but my husband (the celiac) generally will eat at any mexican place (and there are lots of them around here!) He just makes sure he gets corn tortillas and asks about gluten if there are any sauces used. We just ate at Habaneros today...was awesome! Fish tacos were the best ever!

Keep in mind that he is no where near as cautious as many celiacs...he does not worry about cross contamination.

Carrabbas, PF Changs, and Outback also have gluten free menus. As for grocery stores, you can also visit Sprouts or Wild Oats. Not sure on a farmers market.

If you are concerned, you could check out their website www.laparillasuiza.com and send them an email.

By the way, also be careful that the chips served with salsa are corn ..some restaurants use flour.

Good luck!

This was one I tried w/o issues using gluten-free flour. It gets confusing the 121 cup for cup. Especially the price of it. But I love using the make your own mixes of gluten-free flours potato starch such as this to make it go further https://theloopywhisk.com/2021/09/23/homemade-gluten-free-flour-blend/

That's an idea. I have found good chocolate chip recipes that mimic tates cookies or other chocolate chip cookies with gluten-free for without an issue. I have seen recipes from chef Alina looping whisk etc that have gluten-free flour but they are trial and error. I guess I will have to mix and match. I made my own flour using flax meal corn flour potato starch to get more out of the flour then buying a 3lb bag for ex.$20.

Gluten free flours can be very different, even from one manufacturer.  For example, King Arthur has two certified gluten free flours that act quite differently in some recipes. I find that it is best to use the recipes on the website of the manufacturer of the flour, although I often bake for a shorter time than listed. I like this recipe for chocolate chip cookies: Chocolate chip cookies using King Arthur Measure for Measure gluten free flour

Thankyou so much for your replies. I have been gluten, dairy, egg and soya free for 5 years, and am mainly symptom free following an extremely strict diet but still symptoms flare up again and I have to do an elimination test to determine the cause.. basically my intolerances are still developing and I've found I can't eat: apples, grapes, raisins and other dried fruit, spinach, potato, tomato, onion, cabbage, leek, broccoli, mushroom, oily food, coconut oil, pork, sulphites, alcohol, spirit vinegar... I have difficulty breaking foods down, especially the skins of fruit and veg. I have been trying to reintroduce gluten in order to have a reliable ttg blood test, but I'm in so much pain.. abdominal spasms, joint and muscle pain, bloating etc etc, this is all from having half a wheat crispbread. I'm not sure if this is celiac or something else as there seems to be no sign of it getting any better.

I have seen numerous gluten-free flours in stores then 1to1 cup substitute and numerous gluten-free recipes from gluten-free cooking websites that have great recipes but even making my own blend it seems like its not easy to get a fool proof flour substitute for cookies, cakes. I know bread is a bit different but this is more of a science to figure out. I have seen the flour mixes on this site as well. I know gluten-free flours tend to be pricey. What does every use as their go to for baking cookies.
