Can Anyone Give Advice,help Or Even Relate With Gluten Free Weight Gain And Health Problems

After reading this forum I see I am not alone in a huge weight gain After going gluten free allot of people loose weight but I gained.It is truly depressing.I suspect that when people go gluten free our bodies are so depleted of minerals due to leaky gut issues,underlying candida and even other underlying hormone imbalances like low thyroid and PCOS which research has shown is directly linked with gluten intolerance.When we first go gluten free we are so starving that counting carb grams and weighing out portions of food is the farthest thing from our minds.I read in the book BLOOD SUGAR BLUES that they use rice,corn,potatoes to fatten pigs,well no wonder why it seems to have the same affect on humans since pigs are very closely related to humans genetically.Anyway thats my take on it.I think allot of us over eat rice and grains,I know that I do and I have had major weight gain and issues with candida,environmental allergies,Ibs,low thyroid,pcos etc.I am now at the obesity level it is depressing to be weak and sick and then be gaining weight.I still have allot of mineral deficiences due to malapsorbtion and Chronic diarrhea.I aslo have CFIDS Chronic fatigue.I think that allot of us emphasize rice and potatoes which are extremely high glycemic and increase insulin leves.Grains are addicting and comforting,I love curling up to a bowl of rice pasta or rice toast or baked potatoes etc.But these foods are stored as fat.I have noticed allot of people from european decent especially do bad on excess carbs,portion control is boring and it sucks but its amazing how small a serving of rice is!and rice isnt filling unless u eat a plate of it,and a plate of rice is like 5 portions! I think we need to learn to portion control and balance our meals so that they have a balanced ratio of protein fat and carbs.This is my thinking after the research I did.I tried the SCD diet very strictly it made me sick at the time because I was trying to eat the dairy,eggs,cheese and nuts and I am allergic to those,I had just come off a long term vegetarian diet and wasn't ready to add all the meat.But I know it helps many,just didn't for me it was miserable I followed it for 2 months.Now I am trying to transition into a candida style diet but it is so hard because I am pyschologically and physically addicted to carbs and go through major depression and with drawl,so I need to reduce them rather then cut them entirely for a period of time but its very difficult.I feel like I am so restricted already with intolerances to so many foods.And I am weak and pale

There's another thread going now regarding sugar and flour that you should read. There are those of us that feel we are addicted to them and so we avoid them for the most part. I, for one, have eliminated flour and sugar for the time being and I am losing weight and am so in control, the cravings are gone. I have been yo-yoing all of my life and so who knows what will happen this time. Maybe it will be the last time I will have to do this. I am going to think of sugar/flour as being as harmful to me as gluten is. I do not have any trouble staying away from gluten at all. Best of luck to you....Barbara

I have PCOS and am addicted to carbs as well. The addiction to carbs was horrible a year and a half ago, but it's getting better. It's a mental thing and I'm teaching myself to view the foods as if they were cauliflower, which I despise. bleh!!

I would also be interested in the list you created. I am having a hard time with carbs too. I love potatoes, rice, pasta. I've been gaining weight. My doctor says I need to eat differently because my triglicerydes are so high. Any advice would be welcome. I'm frustrated.Here's my email: hisevr@yahoo.com.

Hi, I would be so happy to get anyone the information I have compiled, but I can't get onto the forum as often as I'd like, so please email me and I will forward it to you. rlmcfarland@yahoo.com In order for the information to be more accurate for you, I need the following: age, current height and weight, activity level-what do you do for exercise and how frequently-any restrictions for exercise, dietary restrictions other than gluten and foods that you love (can't live without) and hate. With this info, I can give you a more accurate plan--it varies SO MUCH from person to person. I can then get the info to you within a day or 2. It's a lot of information, so read through it carefully and slowly. You might want to start with one thing at a time.

      Oh wow! Thanks for this information! I’m going to try the Benfotiamine again and will also add a B-complex to my supplements. Presently, I just take sublingual B12 (methylcobalomin). Is supplementation for celiacs always necessary even though you remain gluten-free and you’re healing as shown on endoscopy? I also take D3, mag glycinate, and try to get calcium through diet. I am trying to bump up my energy level because I don’t sleep very well and feel fatigued quite often. I’m now hopeful that adding the Benfotiamine and B-complex will help.       @Hmart, The reason why your intestinal damage was so severe, yet your tTg IgA was so minimal can be due to cutting back on gluten (and food in general) due to worsening symptoms.  The tTg IgA antibodies are made in the intestines.  While three grams of gluten per day for several weeks are enough to cause gastrointestinal symptoms, ten grams of gluten per day for for several weeks are required to provoke sufficient antibody production so that the antibodies move out of the intestines and into the blood stream where they can be measured in blood tests.  Since you reduced your gluten consumption before testing, the antibody production went down and did not leave the intestines, hence lower than expected tTg IgA.   Still having abdominal pain and other symptoms this far out is indicative of nutritional deficiencies.  With such a severely damaged small intestine, you are not absorbing sufficient nutrients, especially Thiamine Vitamin B 1, so your body us burning stored fat and even breaking down muscle to fuel your body.   Yes, it is a very good idea to supplement with vitamins and minerals during healing.  The eight essential B vitamins are water soluble and easily lost with diarrhea.  The B vitamins all work together interconnectedly, and should be supplemented together.  Taking vitamin supplements provides your body with greater opportunity to absorb them.  Thiamine and the other B vitamins cannot be stored for long, so they must be replenished every day.  Thiamine tends to become depleted first which leads to Gastrointestinal Beriberi, a condition that doctors frequently fail to recognize.  Symptoms of Gastrointestinal Beriberi are abdominal pain and nausea, but neuropathy can also occur, as well as body and joint pain, headaches and more.  Heart rhythm disruptions including tachycardia are classic symptoms of thiamine deficiency.  Heart attack patients are routinely administered thiamine now.   Blood tests for vitamins are notoriously inaccurate.  You can have "normal" blood levels, while tissues and organs are depleted.  Such is the case with Gastrointestinal Beriberi, a thiamine deficiency in the digestive tract.  Eating a diet high in carbohydrates, like rice, starches, and sugar, can further deplete thiamine.  The more carbohydrates one eats, the more thiamine is required per calorie to turn carbs into energy.  Burning stored fats require less thiamine, so in times of thiamine shortage, the body burns fat and muscles instead.  Muscle wasting is a classic symptoms of thiamine deficiency.  A high carbohydrate diet may also promote SIBO and/or Candida infection which can also add to symptoms.  Thiamine is required to keep SIBO and Candida in check.   Thiamine works with Pyridoxine B 6, so if Thiamine is low and can't interact with Pyridoxine, the unused B 6 accumulates and shows up as high.   Look into the Autoimmune Protocol diet.  Dr. Sarah Ballantyne is a Celiac herself.  Her book "The Paleo Approach" has been most helpful to me.  Following the AIP diet made a huge improvement in my symptoms.  Between the AIP diet and correcting nutritional deficiencies, I felt much better after a long struggle with not feeling well.   Do talk to your doctor about Gastrointestinal Beriberi.  Share the article linked below.       Other diseases, medical conditions, medications and even (for some people) some non-gluten foods can cause villous atrophy. There is also something called refractory celiac disease but it is pretty uncommon.
