Cinnamon Donuts

Here is this mornings creation in our house. I did not have what I needed to make any of the donut recipes listed on this site, so I changed things around a bit and this is what I came up with:

Cinnamon Donuts

2 eggs, beaten

3/4 c. sugar

1 T butter/margarine/oil; melted

1 c. milk

1 1/2t. xantham gum

1/2tsp. cinnamon

1 tsp. vanilla

2c. Arrowhead Mills gluten-free Pancake and Baking Mix

Mix well. Spray or grease donut pans. Bake @ 350 for 12 minutes. Note that the tops will not be very brown, but the underside of the donut should be. Put on a plate with bottoms facing up and sprinkle with powdered sugar and cinnamon. Eat hot!

Yields: 12 large donuts and 12 small

Substitutions: If using a general gluten-free flour mix, add 1 tsp. baking soda to the mix

Variations:

Chocolate donuts: add 2 oz. Melted chocolate to the mix. Sprinkle with powdered sugar after removing from the oven.

Vanilla donuts: Add 1 tsp. vanilla

My kids love donuts! (I won't mention myself :P ) But, what is a donut pan? I've never heard of this before. Where did you get yours? (I'm a firm believer in gathering as many kitchen gadgets and things as possible.)

I'd love to try this recipe as a special treat one day. Thank you for posting!

I'm lazy -- we buy a "cakelike donut mix" from Miss Roben's and whip those up in my gluten-free Fry Daddy. One package costs about $5 and makes about 4 dozen little donut holes. Which last, at my house, approximately 36 hours......

      Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶

      Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.
