Tnt Carrot Cake

Hi guys, this recipe is awesome, my hubby who is addicted to chocolate asks for it all the time, I have it in the oven right now..enjoy!!

1 1/2cups flour [i use Beth's gluten-free pantry all-purpose]

1 1/3 C sugar

1/2 C sweetened coconut

1/3 cup pecans [ optional]

2 tea baking soda

1 tea salt

2 tea cinnamon

3 Tbls oil

2 lg eggs

2 C grated carrots [i buy then already grated]

1 1/2 cups crushed pinaeapple, drained

cooking spray

heat oven at 350, combine flour, sugar, coconut,pecan, baking soda, salt and cinnamon in a Lg bowl..stir well. combine oil and eggs, stir well, stir in egg mix,carrot and pineapple into flour mixture.

pour into 13x9 pan coated with cooking spray, bake 25-35 mins till toothpick comes out clean

frosting:

2 Tbls butter

1 block cream cheese

3 C powdered sugar [ I use about 2 1/3 cups, go by taste]

2 tea vanilla
