I'm a 60 year old who was diagnosed with gluton intolerance in my 20s. I have been on and off my gluton-free diet more times than I can count. My problem these days is a relentless craving for carbs no matter what or how I eat. How do others deal with cravings and Celiac?

I'm also 60, but was misdiagnosed until age 56. When I was first diagnosed I focussed on substituting gluten free versions of all the foods I formerly loved. Later I was diagnosed with dairy, soy, egg and cane sugar allergies. With each new allergy I had to find new substitutions. If I just gave up eating a formerly favorite food, like ice cream, I craved it even more. So I've really worked to satisfy my cravings with 'safe' versions of whatever I crave.

As for carbs, I tend to crave more carbs, especially sweets, if I either (1) don't have my favorite desserts or carbs often enough or (2) let myself get too hungry between meals and my blood sugar plummets or (3) I don't eat balanced meals (carbs, protein and fats) which can also make my blood sugar plummet. I usually crave textures and tastes, not just specific foods. Those cravings can be satisfied by safe versions of foods. Also I won't restrict foods to which I don't have allergic reactions. With gluten intolerance and 4 additional food allergies, I have enough limitations, without following every nutritional fad that comes along and restricting myself even more.

This is really helpful  I had not considered sugar alcohols or inulin as triggers. Thanks for the practical baking tips too color coding and baking G F first makes a lot of sense. Thiamax (TTFD) plus a B-complex, and if you want benfotiamine, the Life Extension formula covers that at ~100 mg.

High fiber can definitely cause sudden GI distress especially if it’s a new addition but accidental gluten exposure can feel similar. Keeping a simple food/symptom log and introducing new gluten-free foods one at a time can really help you spot the pattern. Thanks for asking  I’m mainly looking for gluten-free staples and snacks. Any recommendations for brands or go-to items would be appreciated.

sorry a bit confused so I should take my B complex along with Objective Nutrients Thiamax for TTFD but what about a Benfotiamine to take. The Life extensions contains Benfotiamine and Thiamine together or im confusing myself. I am trying to see if I take Thiamax what should I take for Benfotiamine. Thanks EDITING after further research I see ones water soluble ones fat soluble. So I guess 100MG as you suggested of Life Extension contains Benfotiamine and Thiamine Hydrochloride. and the Objective Nutrients Thiamax contains TTFD.     would work for me.

I put on over 12kg by eating protein with every meal, 3 to 5 times a day. Eggs, Chicken, Tuna, Turkey etc. I stay away from too much red meat as it can be inflammatory. Scott is correct. I've come across a bunch of Coeliac PT's on Tiktok and Instagram. They all say the same thing, the key is getting enough protein and consistency.
