B12 Supps/ Mouth Sores/ Thyroid/ Was I Glutened?

I recently went back to eating gluten-free and immediately had tons of energy and started going to the bathroom again! (was chronically constipated). A few days ago, I ate over a friends house and she cooked this chicken with roasted veggies for us. She said the chicken was pre- marinated at the store when she bought it.. I also had been eating yogurt, but I for two days straight around there I started eating cheese in my eggs- After these two days, I stopped having ANY BMs and I feel AWFUL.

Could itve been gluten in the marinade or maybe I need to also stay away from cheese (I had cheese a few days before that with no probs though so i dont know..? I had no problem with yogurt and I am not eating any other dairy.

Also, I am currently trying to raisemy dosage of Armour thyroid because I have hypothyroidism, and I have no idea what's going on.

My other complaint is chronic mouth sores (canker soreS). They seem to be appearing every time I take my b12 sublinguilly, but I'm not sure. Anyone ever have this?

I would highly suspect you got glutened at your friends house. We should never eat premarinated meats from the store unless you can get the ingredients of the marinade.

DO NOT just increase the amount of throid meds you take without talking to your doctor first. For one thing if you have recently gone gluten free and you have been glutened that can cause symptoms that may seem to be thyroid connected but are actually gluten.

As to the B12, have you checked to make certain it is gluten-free? I would be more inclined to think that the mouth ulcers are related to the glutening and not to the sublingual.

It can take a while to get over a glutening, hang in there.

Chicken is one of those 'hidden gluten' foods that you have to watch out for. It could have been the marinade; it could also have been something injected into the chicken. Take a look at the wrappers for most roasting chickens and you'll see most of them are injected with all sorts of junk. So my guess is you got glutened by the chicken.

Cheese is less likely to be the culprit, but it could be. Some 'cheese foods' are made with gluten. Pre-shredded cheeses sometimes use gluten-based products to prevent clumping, but that's not too common nowadays.

It's interesting that you mentioned mouth sores. That's something I never linked with gluten, but I've seen several posts mentioning mouth sores as a celiac symptom. I've noticed mouth sores (along with generally feeling bad) lately. My likely culprit is Lays potato and corn chips. The ingredients are just corn/potatoes, oil and salt, so I figured they were safe. But I found a thread on this board where several people said they react to them because of cross contamination. (It was funny because I found that link as I was munching through a bag of Lays chops!)

It goes to show that you really can't trust anything -- even if the ingredients look safe.

      What are your daily meals? Guilty pleasure snacks? Protein bars? I feel when looking for gluten free foods they are filled with sugar cholesterol. Looking for healthy gluten-free protein bars. Something to fill since sometimes I feel like not to eat anything. Especially if on vacation and unsure of cross contamination I figure go with a salad and protein bar to fill and play it safe.

      Unfortunately, there is presently no test for NCGS. Celiac disease must first be ruled out. NCGS is thought to be much more common than celiac disease. We know that celiac disease is an autoimmune disorder but the mechanism of NCGS is less clear. Both call for an elimination of gluten from the diet.

      Thanks for your reply Trents…most appreciated.  I am unfamiliar with celiac labs terminology so I wanted to know if the presence of HLA variants (DA:101, DA:105, DQB1:0301 and DQB1:0501) that the labs detected had any merit in predisposing one to be more sensitive to gluten/carbs than the general population?  Also,  I found what you said about NCGS very interesting and I appreciate you mentioning that.  I’ve worked hard to research and advocate for myself with my Hematologist and now with a new GI, since my bowel surgery and to maintain my Vitamin B12 health concurrent with keeping my levels of Iron in the optimal range. I’ve been tested for SIBO (do not have it), biopsy showed negative for HPylori, and have had Fecal studies done (nothing showed up) and I understand how a loss of a large amount of bowel could be highly impacting re: SIBO, malabsorption and motility issues. So I’ve managed pretty well diet and elimination-wise until just recently. That said, this new problem with extreme bloating, distention and upper girth, NAFLD just occured over the last 4 months so it is new for me and I thought celiac might be a possible issue. I’ll probably just continue on in this less gluten/carbs seem to be better for me and see how reintroducing certain foods go.  Thanks again.

      Thanks bumped it up and now take all 3 vitamins 2 capsules each with the super b complex at breakfast. I will give it some time to see if I notice a difference. I am going to track my eating daily diary on a myfitness pal app to see if the "claimed" gluten free foods bother me or not.

      Please can anyone help. I was diagnosed on 23rd December and I am trying my best to get my head around all the things to look out for. I have read that yeast extract is not to be eaten by coeliacs. Why? And is this all yeast extract. Or is this information wrong. Thanks.
