Corn, Butternut Squash and Ham Chowder

Gluten, Soy & Dairy Free

4 cups Organic Veggy broth

1/4 cup chopped White Onion

2 1/2 cups frozen Corn, thawed

2 cups Butternut Squash, cooked and cut into pieces

1 1/2 cups smoky Ham chunks make sure it's Gluten Free

I clove Garlic, pulverized, then minced

2 ts Kosher salt, adjust to taste

Olive Oil

Preheat oven to 350F.

Cut butternut squash in half, deseed it and place on a baking sheet.

Bake for about an hour, or longer if necessary.

In a soup pot, add a drizzle of olive oil, heat up to Medium, add onion and garlic.

Cook until onion turns translucent, then add corn and veggy broth. Heat to boil

then reduce back to Medium, and cook about 15 minutes. Using an emulsion (stick)

blender, puree the corn. Then add the ham and butternut squash chunks, and check

seasoning, add kosher salt to taste.

Simmer for about 30 minutes on low.

Collette, I'm just curious, have you always cooked like this? I only learned to cook relatively recently, due to celiac, so I was wondering whether other people were already good at this stuff.

I have been cooking as long as I can remember B)

I was not afraid to pull out mom's pans or hand mixer!

Mmmm! That sounds delicious!! I'm printing it out to try!!! I guess I'll have to go buy an immersion blender too!

I love my immersion blender because it's very handy for making sauces and purees without burning your hands trying to pour hot liquid into a blender or food processor! B)

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
