Grilled Apple Slices

I am one of those people that needs to have a bunch of apples from the orchard in the fall. Since I learned about the Celiac my baking has lessened and well a lot of apples are still in the fridge!

We were grilling quite a bit because the weather warmed up and I thought, why not apples.

Slice apples thickly and place in a bowl of lemon water so they don't brown.

I mixed 1/4 cup melted butter, 1/4 cup brown sugar some cinnamon and nutmeg along with 1 Tbsp lemon juice. This was way too much sauce for the apples so next time I would cut it down to 2 Tbsp instead of 1/4 cup.

Drain the apples and place on the cleanest part of your grill. I say that, because our grill is a couple years old and just isn't as clean as I would like it to be.

After they start to brown flip them. Oh and they will stick a bit so if next time I would spray them with PAM. I wouldn't brush them with oil or butter, too much chance for flare up. After they are nicely tanned, dip them in the sauce and place back on the grill, flipping sides after a min or so. You want caramelized apples not burnt (ok ok I burnt a few).

Serve with a side of sauce and whip cream.

BTW the best way I have found to clean the inside of my gas grill is to leave the lid on down and all the burners on high for about 5 min. Of course don't go to far, you don't want a fire or the lid to melt off the hinges!

I used to fry apple slices like this. I'd cut them with the peel still on, fry in butter, and then after they were browned, I'd add a bit of brown sugar and cinnamon. Yum! Can't do butter now so not sure how they'd be without it. I could use coconut oil I guess.

Be careful with your grills, there might be gluten from old sauces burnt on there that needs to be THOROUGHLY cleaned before use.

Thankfully I am the one that did almost all the shopping and almost all the cooking/grilling so I know what was on my grill and thankfully its clean. Plus I burn the heck out of it before I cook on it, nothing lives through that! BUT you are so right, it isn't something I would have really thought about.

I am a bit worried about grills though, we are going to a bbq on Sunday and I am so paranoid. It will be the first time since going gluten-free that I will be eating at someone else's house.

Yes, we have eaten many an apple slice fried this way. We used to eat them for breakfast all the time. I swear I was June Cleaver reincarnated for awhile, I cooked almost every meal from scratch and complete meals at that! I am so over that!!! Just cannot do it anymore.

You can always buy replacement grill parts for your grill too. Like the part you actually grill on.

Me too. When I was single, I was always baking things. I made hand painted chocolates. Would stay up all night cooking stuff sometimes. Now I just give up. Have had so many gluten-free flops that I do precious little baking and don't mind spending a fortune on pre-made stuff.

Breakfasts at our house are usually quick. Maybe 2 or 3 times a year I will make pancakes. Occasionally there will be muffins I baked the night before. But usually it is cereal or toast, maybe with some microwaved bacon or sausage. We're allergic to eggs.

Daughter has started gluten free diet this week as per gastroenterologists suggestion. However says she feels more tired and like she’s been hit by a train. I suggested it could be the change to gluten free or just stress from the endoscopy last week catching up with her. Just wondering if feeling more tired is a normal reaction at this stage. I suppose it’s possible some gluten might have been present without realising. Have tried to reassure her it’s not going to resolve symptoms overnight

Looking for help sourcing gluten-free products that do not contain potato or corn derived ingredients. I have other autoimmune conditions (Psoriatic Arthritis and Sjogrens) so I’m looking for prepared foods as I have fatigue and cannot devote a lot of time to baking my own treats.

I am so sorry you're going through this. It's completely understandable to feel frustrated, stressed, and disregarded after such a long and difficult health journey. It's exhausting to constantly advocate for yourself, especially when you're dealing with so many symptoms and positive diagnoses like SIBO, while still feeling unwell. The fact that you have been diligently following the diet without relief is a clear sign that something else is going on, and your doctors should be investigating other causes or complications, not dismissing your very real suffering.

It is just so sad that health care in the United States has come to this.  Health insurance should be available to everyone, not just the healthy or the rich.  My heart goes out to you.  I would not hesitate to have the test and pay for it myself.  My big concern would be how you could keep the results truly private.  I am sure that ultimately, you could not.  A.I. is getting more and more pervasive, and all data is available somewhere.  I don't know if you could give a fake name, or pay for your test with cash.  I certainly would not disclose any positive results on a private insurance application.  As I understand it, for an official diagnosis, an MD needs to review your labs and make the call.  If you end up in the ER, or some other situation, just request a gluten free diet, and say it is because you feel better when you don't eat gluten.      Hang in there, though.  Medicare is not that far away for you, and it will remove a lot of stress from your health care concerns.  You will even be able to "come out of the closet" about being Celiac!

Yes, I've posted a few times about two companies: Request a Test and Ulta Labs. Also, pretty much we can all request any test we want (with the possible exception of the N protein Covid test and I'm sure a couple of others) with Lab Corp (or Pixel by Lab Corp) and Quest. I much prefer Lab Corp for their professionalism, ease of service and having it together administratively, at least in DC. And just so you know, Request a Test uses Lab Corp and Quest anyway, while Ulta Labs uses only Quest. Ulta Labs is cheaper than Request a Test, but I am tired of dealing with Quest, so I don't use them so much.
