Morning, Ken.....

Yes, ordering a salad is playing with fire!!! I love and adore salads....way back when I could have lived off salads and been very happy....but now sometimes (rarely) I can eat salads but most of the time I can't...apparently that night was one of the nights I couldn't!!!

It seems everytime a state opens a casino they get plenty of crime....so be glad Hawaii didn't get one!!! Besides it gives you a reason to come to Vegas!!!

Hi...

Thanks for the reply!! Have to agree with you....it does seem to take us long term gluten eaters a long time to heal!!! We have so many years of damage done. I'm like you, I wish doctors would take time to listen to their patients....and then knew what to test for!! We can only hope and pray that someday they do!!!

We were going back to vegas for our 39th but thats the year I got sick and by the time i got diagnosed and on the road to recovery, we dont have the time or energy to visit. as to happen one of these days though. Having been there hundreds of times since I was young,

and then on business, kind of miss the place and seeing what it looks like these days.

I just cant digest salads the way I used too. Dont know if its age or lack of vili.. I can eat a little lettuce with no problems but not a big salad liek I used to live off of. Whole head of romain, can of anchovies made into a dressing, ton of olives -- you get the picture <G>

Sounds llke I am the granny around here--am 68 and it was not until late last year that the penny finally dropped. Guess you could call me a slow learner. My gastro problems have pretty much resolved on the diet; any remaining except for accidental glutening do not bother me too much. However, my resulting psoriatic arthritis remains intractable and I am on a new course of sulfasalaziine to try to cope. My mobility is greatly reduced and I feel like in the last five years since the arthritis developed that I have aged 15 years. Sure wish I had found this place sooner and realized what I was doing to myself all those years. But I remain hopeful that this too shall get better and I can return to former activities.

How long has it been since you've been to Vegas? If it's been a few years you're going to see a lot of changes!! Let me know when you're coming maybe my husband and I can meet up with you and your wife. My husband just loves to take visitors on "tour"!!!

Yeah I know its a tough job but someone has to do it. :rolleyes:

IT has been a number of years and we've never seen the "new" hotels. Hard to decide where to stay. My step father sold the light fixtures

to the Tropicana and Caesars back in the 60s. He went every month and we went a few times a year/ I can remember hunting for lizards across from the Tropicana then. I'm not sure where she would want to stay and I'm not fussy. Will take you up on the tour!

You are in for a shock!! You won't believe how Vegas has changed!! Along with all the new hotels since you've been here....there's sky-scraper condos everywhere!!!

My cousin and her husband stayed at the Venetian and really liked it....but the last time they were here they stayed at the Wynn, basically because it was the newest...they liked it but were not thrilled! My brother in law travels all over the world with his job the last time he was here he stayed at the Palazzo (the Venetian's latest addition) and really liked it!!

Oh you poor thing....having to work in Italy!!! Why do you put yourself thru such hardships? Glad your lucky wife can go too!

Have heard gluten free food is easier to come by there.

Don't forget to let me know when you're coming to Vegas....the tour will be on!!!

We'll be going to the other Venetian place for a few days in July but that was also on the top of the list. The Belagio as well although I dont know why.

Not too worried about foods in Italy since I'l be research figs and citrus there and can survive on those and coffee.

My wife Margy is really excited as she's never been to Europe before. Like your brother in law, I traveled everywhere for so long

that sometimes I want to stay glued to the lazyboy.

I can remember being there in July once and showing someone what happens when you open a loaf of bread in 115 degree Vegas weather. Turned into mini square frisbees instantly. I can also remember being there when there were snow flurries. I was stopped for driving in it but showed them an Illinois drivers license. IT was pretty funny.

I research and promote Hawaiian grown tropical fruit for the University here. Teach at the culinary school and generally raise cane with chefs about not using locally grown produce and now about not being celiac and allergy aware. Since I trained as a chef and am on the board of the American Culinary Federation chapter they tend to put up with me <G> Margy really has a thankless job, shes a teacher.

What do you guys do besides give tours to visitors?

Ooops, sorry, I thought I read that you were having a grandchild too. I think I did congratulate Ken before, but if not--how wonderful for you Ken!!!!

I guess I am one of the strange one's here, I have never had a desire to go to Vegas. There are a lot of great places I would love to see in the US, but Vegas has never been one. Too busy for me, and gambling is not something I care about. People do love the casinos though. I moved to Long Island from Michigan, I lived just 40 miles from the Soaring Eagle Casino, and have never been there. Many of my friends have, and they love it, but I never went. Now I am close to the Mohegan Sun, and have no desire either.

My love is the ocean, the big outdoors--trees, flowers, waves, and wildlife!!!!! What can I say!!! :lol:

It's funny about us and vegas. Never had a desire to go though but somehow it keeps being intwined in out destiny.

We were going to Calgary rodeo when my then girlfriend (now wife of 32 years) won a radio contest and 2 tickets.

Since then she's won 2 other trips there. Neither of us are gamblers so that wasnt a draw but there is a lot more too it than that.

Like Del mentioned the shows can be really good. We used to drive to the grand canyon and though the dessert.

Once found a bunch of turquoise. You won't find the ocean though but being in hawaii I get that all the time <G>

Nice thread although I forget what it started out to be :) but at least I am old enough to post here, 61, not too difficult to remember how old I am these days, since I have finally quit lying about my age :o

Mushroom, for your arthritis, I suggest that you should be completely dairy free & not just lactose free - lactose free does nothing, IMO. Also, watch the nightshade veggies - especially white potatoes, maybe switch to sweet potatoes. & do not drink orange juice - very bad for the joints. & sorry - I am full of food advice - do not eat any oatmeal - no matter what people say.

AND, you might want to consider a grain free diet, maybe a little white rice & some white corn tortillas, if you do not have a problem with corn - but be sure to have days where you have neither...

I feel that almost all arthritis is basically caused by a food or foods - intolerance or allergy does not seem to matter - but IMO you can find the offending food(s) & be pain free & get off all meds. What the offending foods are doing is damaging you over & over each time you consume them.

I am beef free, grain free (except as above), gluten free, dairy free, no white potatoes, no beef, no colas, tea, or coffee, soy free (mostly), & I think one of the most important things is I am diligent about being corn syrup free (well except for the occasional See's chocolate...) I even make my own salad dressings & ketchup so that they are chemical free & corn syrup free.

& of course you need a completely gluten-free house so you are not getting CC. Good luck & I hope you look at your diet... as I learned about foods after going gluten-free I slowly changed my diet - I eat nothing like I did when I was first gluten-free & I thought I ate a healthy diet then. & I will say when I was first gluten-free, I used to hear people say what I am saying & I thought they were nuts!!! It takes time - I realize that you cannot do everything in one day - just letting you know that as you learn and adapt - keep making those diet changes for the better...

My husband, Bruce, is the Field Operational Manager for Yellow, Checker, Star Transportation...quite a mouthful, isn't it!!

He's the main boss out on the road of YCS cab company....investigates accidents and incidents involving Yellow, Checker and Star Cabs....."strongly" instructs drivers on their crazy driving! I'm a homemaker...I was a property manager. (I'm not sure dealing with tenants was any easier than Bruce dealing with cab drivers!! LOL)

I did do dairy free for about three weeks (maybe not long enough?) and I have been avoiding most nightshades although find potatoes hard--but do love sweet potatoes. I guess no OJ means no oranges either; darn about that and I never, never eat oatmeal--that was what first gave me problems as a child. Grain free is a hard one to contemplate (bread, pizza, cookies) but it is sure worth trying. Would sure save me a lot of money at the Totally Gluten Free Bakery :lol:

I don't do colas or tea-type tea, only herbals, but I do love an occasional decaf cappuccino, mmm. It is funny how we do occasionally accidentally figure out what we shouldn't have (I am caffeine-free), but I would never, ever figure out the corn syrup. What is wrong with that?? I gave up beer years ago because it just didn't taste good to me any more, not because I thought it was giving me problems. Beef in the U.S. I haven't been doing unless it is organic--I figured it must be the corn-feeding since I have problems with corn in tthe U.S. though not here in New Zealand that I am aware of, and I am also not aware of problems with beef here either since it is all grass-fed. What is your specific objection to beef?

I do have a completely gluten-free house because my husband decided he felt better without it too. He occasionally cheats when he is out and he occasionally pays the price with D distress on the trail.

I will carefully consider everything you have said as these arthritis meds make my hair fall out and I would surely prefer to be free of them and keep my gorgeous locks (at least they used to be gorgeous, but a bit thin at the front now!)

Again, thanks so much for your advice. Maybe one thing at a time, starting with potatoes. Then maybe my fingers can stop looking llke sausages, which I can't eat because if they are gluten-free they put soy in them!

Just wanted to say that for many corn is a common allergen. Also corn syrup is a sugar and as such can exacerbate candida overgrowth and other fungal conditions which could also create more inflammation and general toxicity as well as brain fog.

Do consider trying the dandelion root and cleavers tea (perhaps etc?) I listed earlier to help detox and reduce all that inflammation.

Its also possible that you may be having an adrenal/thryoid problem from system overload. You may then need to support your adrenals and thyroid. A good site to check out is Wilson's Thyroid Syndrome where they list both natural remedies as well as T3 supplementation. If your temperature is low, I suggest trying natural remedies and supplements at first. Many here find those problems go away in time without having to become dependent on cortisol and/or thyroxin. I have an ex boyfriend also from New Zealand who is still a good buddy of mine whom I have been helping with these very similar symptoms as you describe them. He really is looking better and better though it is slow slogging and the fall and winter months are the worst since it stresses the adrenals out even more and thus also the thyroid. He in particular has had a very hard time this year. Like you he has been on an anti gluten diet since March or April of last year. It has been a slow learning process for him however he is making progress even though its difficult.

I suggest you make sure you eat small healthy non sugary meals throughout the day in order to avoid having low blood sugar--which stresses the adrenals and starts this cascade. Its also good to meditate and do exercise even though you might really not want to. You will find you feel better from doing it and being active rather than just vegetating. Watching funny movies, visiting friends you like and doing things that keep you interested and happy and not emotionally suppressed are also very important for your hormonal balance--something that is really important when dealing with any kind of inflammatory arthritic situation as well as the adrenals and thyroid.

Hi Bea: Since you mentioned New Zealand (I remember you were once here) and corn syrup, I assume your post was directed to me. I did once test mildy intolerant of corn via skin prick test and have never actively sought corn in my diet although have never been afraid of occasional corn content. Maybe I should be.

My NP suggested dandelion root and I have some in my pantry but have never actually got around to using it, having been consumed with cascades of other things and trying to deal with them. And I have never heard of Cleavers--will look and if I can't find it here get some when I am in Nevada in July. My NP was concerned about my adrenals and my free T3 was really borderline. Will check out the Wilson's Thyroid syndrome. Certainly my inflammation has been off the charts with a CRP of 81 (scale <9). There is just so much stuff to consider that it is really hard to deal with it all at once, it is a bit overwhelming, especially when I am so exhausted and lethargic. I haven't even been back to my NP in months and I must return.

      Wow KK, thank you so much for all your attached info. I had a very quick scan but will read more in depth later.  The one concerning corticosteroid use is very interesting. That would relate to secondary adrenal insufficiency I think , ie AI caused by steroids such as taken long term for eg asthma. I have primary autoimmune AI, my adrenals are atrophied, no chance if recovery there. But I am in touch with some secondaries, so something to bear in mind. .  Niacin B3 Very interesting too. Must have a good read about that.  Im sure lots of questions will arise as I progress with dermatitis herpetiformis. In the mean time, thanks for your help.

      Thank you all for your advice and the dermatitis herpetiformis article. The latter made me realise I had stopped taking my antihistamine, which I will restart today. The Dapsone has cleared the rash entirely but I still get quite a bit itching, absolutely nothing to see though. I know its notoriously hard to clear and its still relatively early days for me.  The iodine issue is very interesting. I do eat quite a bit of salt because I have Addison's disease and sodium retention is an issue. I also have autoimmune hypothyroidism, not sure how a low iodine diet would play into that? Because of my Addison's I am totally steroid dependent, I take steroids 4 x daily and cannot mount any defence against inflammation. I need to increase my meds for that. Now that I know what is wrong I can do just that if Im having a bad day. Life is very sweet, just so damn complicated sometimes! Hey ho, onwards. Thank you again for your advice.

      So, essentially all of the nutrition in the food we eat is absorbed through the villous lining of the small bowel. This is the section of the intestinal track that is damaged by celiac disease. This villous lining is composed of billions of finger-like projections that create a huge amount of surface area for absorbing nutrients. For the celiac person, when gluten is consumed, it triggers an autoimmune reaction in this area which, of course, generates inflammation. The antibodies connected with this inflammation is what the celiac blood tests are designed to detect but this inflammation, over time, wears down the finger-like projections of the villous lining. Of course, when this proceeds for an extended period of time, greatly reduces the absorption efficiency of the villous lining and often results in many and various nutrient deficiency-related health issues. Classic examples would be osteoporosis and iron deficiency. But there are many more. Low D3 levels is a well-known celiac-caused nutritional deficiency. So is low B12. All the B vitamins in fact. Magnesium, zinc, etc.  Celiac disease can also cause liver inflammation. You mention elevated ALP levels. Elevated liver enzymes over a period of 13 years was what led to my celiac diagnosis. Within three months of going gluten free my liver enzymes normalized. I had elevated AST and ALT. The development of sensitivities to other food proteins is very common in the celiac population. Most common cross reactive foods are dairy and oats but eggs, soy and corn are also relatively common offenders. Lactose intolerance is also common in the celiac population because of damage to the SB lining.  Eggs when they are scrambled or fried give me a gut ache. But when I poach them, they do not. The steam and heat of poaching causes a hydrolysis process that alters the protein in the egg. They don't bother me in baked goods either so I assume the same process is at work. I bought a plastic poacher on Amazon to make poaching very easy. All this to say that many of the issues you describe could be caused by celiac disease.

      thank you so much for your detailed and extremely helpful reply!! I can say with absolute certainty that the less gluten containing products I've eaten over the past several years, the better I've felt.   I wasn't avoiding gluten, I was avoiding refined grains (and most processed foods) as well as anything that made me feel bad when I ate it. It's the same reason I gave up dairy and eggs- they make me feel ill.  I do have a bit of a sugar addiction lol so a lot of times I wasn't sure if it was the refined grains that I was eating - or the sugar. So from time to time I might have a cookie or something but I've learned how to make wonderful cookies and golden brownies with BEANS!! and no refined sugar - I use date paste instead. Pizza made me so ill- but I thought it was probably the cheese. I gave up pizza and haven't missed it. the one time I tried a slice I felt so bad I knew I'd never touch it again. I stopped eating wheat pasta at least 3 yrs ago- just didn't feel well after eating it. I tried chick pea pasta and a few others and discovered I like the brown rice pasta. I still don't eat a lot of pasta but it's nice for a change when I want something easy. TBH over the years I've wondered sometimes if I might be gluten intolerant but really believed it was not possible for me to have celiac disease. NOW I need to know for sure- because I'm in the middle of a long process of trying to find out why I have a high parathyroid level (NOT the thyroid- but rather the 4 glands that control the calcium balance in your body) I have had a hard time getting my vit D level up, my serum calcium has run on the low side of normal for many years... and now I am losing calcium from my bones and excreting it in my urine (some sort of renal calcium leak) Also have a high ALP since 2014. And now rapidly worsening bone density.  I still do not have a firm diagnosis. Could be secondary HPT (but secondary to what? we need to know) It could be early primary HPT. I am spilling calcium in my urine but is that caused by the high parathyroid hormone or is it the reason my PTH is high>? there are multiple feedback loops for this condition.    so I will keep eating the bread and some wheat germ that does not seem to bother me too much (it hasn't got enough gluten to use just wheat germ)    but I'm curious- if you don't have a strong reaction to a product- like me and wheat germ- does that mean it's ok to eat or is it still causing harm even if you don't have any obvious symptoms? I guess what you are saying about silent celiac makes it likely that you can have no symptoms and still have the harm... but geez! you'd think they'd come up with a way to test for this that didn't require you to consume something that makes you sick! I worry about the complications I've been reading about- different kinds of cancers etc. also wondering- are there degrees of celiac disease?  is there any correlation between symptoms and the amnt of damage to your intestines? I also need a firm diagnosis because I have an identical twin sister ... so if I have celiac, she has it too- or at least the genetic make up for having it. I did have a VERY major stress to my body in 2014-2016 time frame .. lost 50lbs in a short period of time and had severe symptoms from acute protracted withdrawal off an SSRI drug (that I'd been given an unethically high dose of, by a dr who has since lost his license)  Going off the drug was a good thing and in many ways my health improved dramatically- just losing 50lbs was helpful but I also went  off almost a dozen different medications, totally changed my diet and have been doing pretty well except for the past 3-4 yrs when the symptoms related to the parathyroid issue cropped up. It is likely that I had low vit D for some time and that caused me a lot of symptoms. The endo now tells me that low vit D can be caused by celiac disease so I need to know for sure! thank you for all that great and useful information!!!
