Me Again...chocolate Peanut Butter Cookies

Well, the cake went really fast! So we decided to replace it with some cookies. These turned out great, I think they're the best cookies I've made since going gluten-free! Also, I posted it on my Blog again (I think I'm going to start posting recipes there frequently) with some pictures of the cookies. Open Original Shared Link

These are gluten, dairy and soy free. If you don't have any other dietary issues, I bet real butter would be better!

One warning...make sure you don't over cook them, because the one pan that I left in the oven too long were like hockey pucks. Yummy hockey pucks, but still......

1/4 cup dairy and soy free butter substitute

1/2 cup peanut butter

2 cups sugar (we use fructose)

3/4 cup cocoa

4 eggs

2 cups gluten free flour mix (I use 1/2 rice flour 1/2 tapioca flour)

1 tsp. xanthan gum

2 teaspoons vanilla

2 teaspoons baking powder

1 package peanut butter chips (check the package for gluten, I used a gluten-free store brand)

Mix together peanut butter, butter, sugar, vanilla and cocoa. Add eggs one by one and blend until smooth. Add in dry ingredients, mix well. Add peanut butter chips last and mix until incorporated. Chill the dough for about an hour (or toss the bowl in the freezer for 1/2 hour like I did if you can't wait). Preheat oven to 350 while the cookies chill. Roll the cold dough one tablespoon at a time into balls, and place on a cookie sheet. Bake for about 10 minutes (but watch them, it can vary from oven to oven). Take out and let cool before removing from the pan. Enjoy!!!

These are already dairy free!

These are already soy free!

Make it peanut free: Omit peanut butter and add 1/2 cup more dairy and soy free butter substitute. Omit peanut butter chips and replace with white chocolate chips or butterscotch chips.

Make it egg free: Hmmm, dunno if you can do it? Anyone with egg substitute experience, let me know if you can use the powdered egg substitute with this one.

MMM I am going to have to try these... I am hoping to find glutrn free chips (all the ones I seem to be finding have soy lecithin in them... no for me lol;)

yummy! the kids look like they're enjoying them :) i have a similar recipe from one of my cookbooks (Williams-Sonoma's gluten-free cookbook, I think), it's a peanut butter cookie with chocolate chips. Just uses peanut butter instead of the chips. Might have to try this recipe...definitely in a cookie mood!

Oh, man...sickchick, I'm glad you said something! I'll have to check the pkg of chips I used, but I bet they have some soy. We can tolerate a bit of soy, so it wasn't a concern for us...I went back and changed the blog post to make sure anyone who uses it checks for soy in the chips.

I am new with this Forum so I hope you find my question: What is Enjoy Life? i am looking Peanut,Tree nut, Shell fish , Fish, Honey free everything perferably not to expensive. Maybe if I add as new topic I would get more help.

Enjoy Life is a brand that does allergy free foods. They are free of all of the ones you listed, except I don't knwo about honey. Not too expensive...boy, that's a tough one. As you get used to things, you tend to find regular grocery items that are OK. allergygrocer.com has tons of products and you can search according to which foods you need to avoid, you can order them there or you can look for them at your local health food store. HTH!

Where do you find dairy free peanut butter chips? I haven't seen them and would LOVE to find some.

colette, seriously, order the bag online. They're the best choclate chips I ever had. My boyfriend just eats them by the handful and they melt so well and since they're little they're really good to bake with without having them sink and.... Yeah, just get em.

      Hi Jane: You may want to try the D3 I now take. I have reactions to fillers and many additives. Sports Research, it is based in the USA and I have had no bad reactions with this brand. The D3 does have coconut oil but it is non GMO, it is Gluten free, Soy free, Soybean free and Safflower oil free.  I have a cupboard full of supplements that did not agree with me -  I just keep trying and have finally settled on Sports Research. I take NAKA Women's Multi full spectrum, and have not felt sick after taking 2 capsules per day -  it is a Canadian company. I buy both from Amazon. I wish you well in your searching, I know how discouraging it all is. Florence.

      highly unlikely  NOTHING and I mean NOTHING else has ever caused me these kinds of symptoms I have no problem with dates, they are a large part of my diet In fact, I eat a very high fiber, very high vegetable and bean diet and have for many years now. It's considered a whole foods plant based or plant forward diet (I do now eat some lean ground turkey but not much) I was off dairy for years but recently had to add back plain yogurt to meet calcium needs that I am not allowed to get from supplements (I have not had any problem with the yogurt)   I eat almost no processed foods. I don't eat out. almost everything I eat, I cook myself I am going to keep a food diary but to be honest, I already know that it's wheat products and also barley that are the problem, which is why I gradually stopped eating and buying them. When I was eating them, like back in early 2024, when I was in the middle of moving and ate out (always had bread or toast or rolls or a sub or pizza) I felt terrible but at that time was so busy and exhausted that I never stopped to think it was the food. Once I was in my new place, I continued to have bread from time to time and had such horrible joint pain that I was preparing for 2 total knee replacements as well as one hip! The surgery could not go forward as I was (and still am) actively losing calcium from my bones. That problem has yet to be properly diagnosed and treated   anyway over time I realized that I felt better when I stopped eating bread. Back at least 3 yrs ago I noticed that regular pasta made me sick so I switched to brown rice pasta and even though it costs a lot more, I really like it.   so gradually I just stopped buying and eating foods with gluten. I stopped getting raisin bran when I was constipated because it made me bloated and it didn't help the constipation any more (used to be a sure bet that it would in the past)   I made cookies and brownies using beans and rolled oats and dates and tahini and I LOVE them and have zero issues eating those I eat 1 or more cans of beans per day easily can eat a pound of broccoli - no problem! Brussels sprouts the same thing.   so yeh it's bread and related foods that are clearly the problem  there is zero doubt in my mind

      Thank you for your post, @nanny marley It is interesting what you say about 'It's OK not to sleep'. Worrying about sleeping only makes it much harder to sleep.  One of my relatives is an insomniac and I am sure that is part of the problem.  Whereas I once had a neighbour who, if she couldn't sleep, would simply get up again, make a cup of tea, read, do a sudoku or some other small task, and then go back to bed when she felt sleepy again.  I can't think it did her any harm - she lived  well into her nineties. Last week I decided to try a Floradix Magnesium supplement which seems to be helping me to sleep better.  It is a liquid magnesium supplement, so easy to take.  It is gluten free (unlike the Floradix iron supplement).  Might be worth a try.

      Thank’s for addressing the issue of mushrooms.  I was under the impression that only wild mushrooms were gluten-free.  Have been avoiding cultivated mushrooms for years. Also, the issue of smoked food was informative.  In France last year, where there is hardly any prepared take-out food that is gluten-free, I tried smoked chicken.  Major mistake!
