Salmon Pattie Recipes?

A family favourite here is salmon patties. Of course all my recipes call for either bread crumbs, flour or crushed Saltines.

Being new to this, I'm not sure if I can substitute gluten-free crackers or flour .... anyone have a tried and true recipe?

Use your old recipe and make some substitutes. You can use the same amount of gluten-free ingredients as the recipe calls for. For flour I use Bob's Red Mill all-purpose gluten-free flour blend. Also us it in the same amount as wheat flour in sauces and gravy and use it exactly the same preparation method. Others use other flours. For breading or filler there are gluten-free breadcrumbs available or you can process a gluten-free rice or corn cereal or bread or crackers in a food processor or blender. I use Health Valley Corn Crunch 'Em's. The regular famous Rice Chex are now gluten-free. Just look on the back of the box for the words gluten-free and the red check mark in the box next to the words. There are still a few boxes of the old non-gluten-free formula out there so we have to check. Be sure that your mayo is a brand that is gluten-free and also not cross-contaminated from use by others in the house or from before you started on the gluten-free diet.

I always keep gluten free (home made) bread crumbs in the freezer... for easy access :)

Do you have any gluten free bread around? Just grind some up in a food processor or blender.

I found some gluten-free brown rice bread crumbs in a bag at the store. I have not used them yet. Will be making meatloaf soon.

I have the Bob's Red mill all purpose gluten-free flour. I've just not used it yet. Wasn't sure if I could substitute it straight like that.

Thank you, I'll be giving the usual recipe a try and see if my family can tell the difference.

I use corn meal to substitute for bread crumbs AND for flour (when it's used as a breading, not when it's used in a roux)! It works so well, my family says most of my recipes taste BETTER now. I do use it in my salmon patty recipe, but season it the way I would have seasoned the bread crumbs. Dried potato flakes also work well as a bread crumb substitute. Both corn meal and potato flakes, IMHO, work much better than brown rice flour mix, which can end up heavy or gummy. The lightest substitute I have found (for something like Panko) is crushed gluten-free crisp rice cereal.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny...

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
